Potato Bacon Chowder

Reviewed: Dec. 6, 2009
Very, very good. I'd vote 5 stars but for the fact that I think the results would have been bland made exactly as specified. I didn't use C. of Chix soup because its full of preservatives and artificial flavorings. Instead I used l.o. chicken gravy and sherry. Then I added chives, garlic , nutmeg, and extra salt and pepper. Given those adjustments this is very fine.

Downeast Maine Pumpkin Bread

Reviewed: Dec. 6, 2009
I've made this recipe twice now. The first time I made it, I made a loaf as well as a dozen muffins. They didn't turn out as well as I'd hoped--you could pretty much taste the vegetable oil (not a great flavor). So this time I made it with 2/3 cup cinnamon apple sauce and 1/3 cup oil. They turned out so much better!! Fluffy, sweet, flavorful. I made all muffins this time, and I put streusel on top too, made of flour, brown sugar, cinnamon, and butter. This adds a little extra oomph to the deliciousness of this recipe, in my opinion!! Muffins baked for about 30 minutes.

Monkey Bread II

Reviewed: Dec. 6, 2009
I cheated and used Bridgeford frozen dinner rolls, cut into 1/4s. 'Hard to judge the results given that departure, but the family enjoyed them. I used crannies, rather than raisins and if I did so again, I'd soak them first in o.j. to soften them a bit.

Delicious. I went w/ boneless skinless chicken thighs to reduce the fat as I'm health conscious and doubled the garlic. This was still fantastic.

So good! I only used about half the box of pasta, and kept everything else the same. My hubby wanted to finish the entire dish, but I made him save some for me, for leftovers tomorrow! Thank you for sharing!!

Lobster Bisque

Reviewed: Dec. 6, 2009
I took 2 cans of chicken broth and simmered my leftover lobster tail shells-4- to make a seafood broth. Then I did as others, doubled the butter, flour, 3 TBSP tomato paste, added 2 TBSP worcestershire sauce, 1/4 tsp celery salt, 1/4 tsp nutmeg, 2 tsp Old Bay Seasonsing. Used 1 pint of half and half. Simmered for an hour. Added in my lobster tails at the end and then used my emmersion blender to make it smooth. Poured in about 1/4 cup of sherry to serve...YUM!

French Onion Soup V

Reviewed: Dec. 6, 2009
This was the best french onion soup that I've ever had - granted, this was only the fourth time that I've had French Onion soup. I sauteed the onions for about 30 mins until they were fairly carmelized. I deglazed the pan with the beef broth. Then I used Pinot Grigio as the wine. At the end, I used gruyere and mozzarella cheese on top. I will definitely make it again.

'Day Before Payday' Kielbasa and Corn Hash

Reviewed: Dec. 6, 2009
Easy, tasty and so nice to have all the ingredients on hand. I decided to omit the corn and eggs as it already made ~6 servings. I put the potatoes in ~10 minutes early to allow them to cook through and used 2 fresh bell peppers and 1 1/2 onions. MMmmm!

Melt-In-Your-Mouth Meat Loaf

Reviewed: Dec. 6, 2009
This recipe will be my go to recipe for both the meatloaf and glaze (with a few modifications for our personal taste). I add 1/2 packet of onion soup mix in place of the minced onion, and a mixture of buttery bread crumbs and oatmeal in place of the bread crumbs. I also add a teaspoon of dry mustard to the glaze. This yields a moist, flavorful loaf with a sweet, tangy glaze, reminiscent of what is served at Boston Market restaurants. We prefer meatloaf baked in the oven though as opposed to the crockpot.
