German Chocolate Cake Frosting II

Reviewed: Jun. 13, 2008
I don't bake much, but dad is coming over tomorrow for father's day and german chocolate is his fave- made a boxed dark chocolate cake mix, two 8" rounds, then layered and topped with this fabulous frosting! I doubled the batch, roasted my coconut and peacans, used half white, and half brown sugar. So very good. Thanks for sharing this. Takes a boxed cake mix through the roof!

Spinach and Orzo Salad

Reviewed: May 25, 2008
WOW! I just made this, hasn't even chilled yet, but it tastes sooo good! I toasted my pine nuts, added tomatoes, and cooked the orzo in chicken broth to add extra flavor...I can already tell this will be a keeper. The pine nuts add a wonderful crunch, also I used one container of regular feta and one lemon and oregano flavored. Make this salad and you won't be disappointed!!! I am back, adding to my review. This salad is absolutely my new favorite. You can even sub some of the chicken broth you cook the orzo in for some of the olive oil. I did this to cut down on the fat, and WOW! It packs in a ton of flavor. I gave some to my mom, who took it to work and added a grilled chicken breast to it. She called to say it was her new fave as well! MAKE THIS!

Broccoli and Tortellini Salad

Reviewed: May 9, 2008
Delish! Make sure to do these few things, and your salad will be Fabulous. 1.) Blanch brocolli peices in almost boiling water for about 1 minute, scoop out and put in ice water to shock and produce a beautiful green 2.) toast sunflower seeds 3.) if you use frozen tortelinni, cook for only 2-3 minutes in not-quite-boiling water- they will be done enough, any longer and they will be mushy and fall apart 4.) make 4 times the dressing called for, use a combo of miricle whip and mayo and only 1/2 cup sugar. Lastly, mix pasta, broccoli, craisins and 2/3 of the dressing the day before and let it marinate! Top with the rest of the dressing, seeds and bacon (i didn't use onion) right before serving. Your family will love this!

Strawberry Fruit Dip

Reviewed: May 7, 2008
YUM! Took the advice of adding a big scoop of cool whip to make this more 'dippable' It was simply perfect. 6/9/08 I am adding to my review...I made this again yesterday, and added the juice of an orage. It really lightens this dip up and makes it tase very fresh!

Cashew Avocado Chicken Salad

Reviewed: Apr. 24, 2008
Yum. Poached chicken breasts in low sodium chicken broth, cooled and shredded. Added a little light sour cream and miricle whip to the ranch dressing to make it creamier. Tossed avacado in fresh lemon juice to prevent ugly browning. Lots of dill, kosher salt and pepper! Served with sliced tomotoes, lettuce and toasted baguettes. My mom and I really enjoyed this salad! Thanks :)

Slow Cooker Barbecue Ribs

Reviewed: Apr. 23, 2008
These were fantastic!! I browned them in the oven like the recipe says, don't skip this part! You get a nice crust and drain some of the fat. I browned them and mixed the sauce up the night before and threw it all in a bowl and stuck it in the fridge. In the morning i just tossed it all in the crockpot and let it cook for 8 hours. When I got home from work, i was a little bummed b/c the sauce looked so thin, I put the ribs and sauce on a sheet pan and baked for about 15 minutes at 400 and MAN were these GOOD- the sauce carmelized and thickened up beautifully. The best ever. Thanks!!!!

Tuna Macaroni Salad

Reviewed: Apr. 20, 2008
Good as is, also good with a few alterations for a healthier version- used one box wheat pasta, added low fat ceaser dressing, miracle whip and sour lean. No need to marinate overnight. I also use two 6 ounce cans of tuna and stir in frozen peas! I know this is practically a different recipe, but if you're like me and want to 'health up' recipes sometimes, this works beautifully! This is also really creamy :) YUM.

Chicken and Cashews

Reviewed: Apr. 15, 2008
I increased the serving size to four and the sauce was thin- I would recommend using 1C water instead of 1 1/3 the recipe calls for if you change it from 1 t0 4. I used brown sugar, teryaki sauce (didn't have soy) and added zuccini, mushrooms and garlic. Not knock-your-socks-off-good, but pretty-good-for-a-quick-dinner-good!

Special Buttercream Frosting

Reviewed: Apr. 13, 2008
It was my friend's birthday at work and I forgot to order her cake, and a box cake is boring, UNLESS you top it with a fabulous, homemade buttercream frosting! This was fabulous. I can't imagine what it would have tasted like if I had used all shortening...I used 1 1/2 C butter and 1/2 C shortening and it still had a little strange after taste. I used almond flavoring instead of vanilla and about 6 C powder sugar. I also used some food coloring to make it almond color. Topped a boxed triple chocoalate cake mix- made two rounds and layered it. It was to die for. Thanks!!

Butter Icing for Sugar Cookies

Reviewed: Apr. 1, 2008
MMMM, topped 'soft sugar cookies IV' from this site, so good and sweet. I don't have a sweet tooth normally, but my husband was craving sugar cookies, so i went for it, glad I did! This frosting was so good and easy. I used almond extract instead of vanilla, just personal preference. Also ended up adding more milk. I don't bake, but I may add these cookies and icing to my rotation!

Soft Sugar Cookies IV

Reviewed: Apr. 1, 2008
Wow, so good. I don't bake...ever, but the snow was falling (in march :() and I got the urge to, um, bake. These were so good! I wanted a recipe I didn't have to chill or roll, and this fit the bill! These come out of the oven looking the same as they go in, so make them the size you want them. I baked for exactly 10 minutes and they didn't look done, they were white on the top, but the bottoms were browned and perfect, so don't bake too long! Topped with 'butter frosting for sugar cookies' from this website, excellent! Only change to this recipe, added almond extract instead of vanilla and some lemon juice. MMMM thanks :)

Roasted Garlic Bread

Reviewed: Mar. 30, 2008
Maybe Ciabatta bread would be better...next time I will toast the bread on both sides, then slather the butter/garlic mixture on, then broil. The bread is good as is, but w/these modifications it would have been better! I also dumped the butter, parsley and roasted garlic in the food processor to get a nice, creamy mix, good stuff!

Asparagus Cashew Rice Pilaf

Reviewed: Mar. 30, 2008
Perfect side dish. Made for my friend who is lactose intolerant, so I omitted the butter and sub'd olive oil- Also, when I added the veg broth, I ended up using 2 cans, I added the 1 1/4 C the recipe called for, but that was absorbed quickly, so as I stirred the boiling mixture, I added bit by bit more broth. This was fantastic! Also, roasted my asparagus and toasted my cashews.

Spinach and Strawberry Salad

Reviewed: Mar. 25, 2008
Very good- made for Easter. I didn't think there was too much sugar like others did. I toasted the sesame seeds before i added them to the dressing. I used one bag of baby spinach and one bag of romaine hearts, 2 cartons of strawberries- equalled the right amount! I highly recommend this salad, as is!!

Chicken Milano

Reviewed: Mar. 15, 2008
This was fantastic! Even the rest of week as leftovers it was supberb! I made this for college sons birhtday dinner. I 4x the recipe. I had 10 guests. I did not use the recipe calculator-- I just 4x all ingredients. I cooked the chicken as directed, but since I had so much to cook, I browned all chicken in pan with oil as directed and had all drippings.. I did not cook chicken all the way thru. I transferred all to platter and then grilled till done. Since this was for a crowd,I sliced chicken into strips and cut into 2 inch pieces. I didnt want to plate each persons plate so I served it all family style.. cooked fettucini, sauce and chicken--mixed all in bowl. I did not use all the sauce, there was probablly 3 cups left. That came in handy when saving all leftovers, I poured remaining sauce over everything and that kept it all moist and extra creamy. (you know how sometimes left overs get dry) My husband, and our daughters boyfriend ate left overs for a few days this week and each raved how this was fantastic with each reheating.. A definite one to make and save!! Definitely restaurant quality.

Best Marinara Sauce Yet

Reviewed: Mar. 11, 2008
I wonder what I did wrong- I followed the recipe except i only had red wine, so i used that in place of white. It just didn't tast right, can't put my finger on it. I used this to top my stuffed shells from this site. My company seemed to enjoy the meal, but to me the sauce wasn't very good. Maybe I will try this again and tweak it a bit.

Stuffed Shells I

Reviewed: Mar. 11, 2008
These were pretty good. I used half cottage cheese, half ricotta and pured the mixture in my food processor. Then added the spices. I used the piping method to fill the shells and it worked beautifully. I do recommend only cooking the shells for 5 minutes, run cool water over them, then lay them out on towels to dry and cool for about 20 minutes- makes filling them a breeze. Made my own pasta sauce from this site, "best marinara ever" Next time I will use a different sauce recipe...

Exquisite Pizza Sauce

Reviewed: Mar. 2, 2008
This recipe has multiple uses. I, like other users only used one table spoon of Honey, but followed the rest of the recipe to the letter and used it on my pizza, and everyone loved it! Mega kudos to the Canadian Inventor in AZ. I had a lot left over, so, I added diced tomatos, placed the rest in a sauce pan and placed it on medium heat, and I added two slices of Provalone Cheese. I boiled up some angel hair, and added some Italian marinaded chicken (which I baked) and boom, Chicken Carbonara!!! This pizza sauce can be easliy converted to a carbonara sauce. Thank you thank you thank you!
