Baked Potato Soup

Excellent. Doubled everything besides the basil. Took about an hour to make, not 30 minutes. Added some cornstarch whisked with water at the end to thicken a bit and mashed one of the 4 potatoes to add texture. Great flavor, we all enjoyed this with french bread. Thank you for the post.

The edges burned, and the middle didn't even get warm. Good ingredients, bad baking method. May try again baking at 400 instead of broil.

Cinnamon Coffee Cake II

Used 1/2 oil, 1/2 applesauce to reduce the fat content. Baked for 20 minutes at 350 as written, but only 30 minutes at 325- it was plenty and would have been dry had i cooked it longer. Other reviewers said this is better by the third day so i made it early, i need it in three days (but had to try it last night, it was to die for!) Very light, fluffy and flavorful. Thanks.

Sausage Mushroom Quiche

Sooo good! Made for a light dinner for mom and I. Used turkey sausage (1 lb) and used half cream, half milk to reduce the fat. All of the ingredients fit into one deep dish pie crust, not sure why some reviewers had problems with this. I also prebaked my pie crust for ten minutes, sprinkled a handful of cheddar cheese on the bottom and poured the rest of the mixture in. Very good.

Greek Salad V

Great! Added chopped Romaine hearts and used greek vinagerette from a bottle (i cheated!) and brought to a party- it was gobbled up quickly. Make sure to use good olives.

Mocha Angel Food Torte

Very good. Whipped this up for my mom's birthday in about 5 minutes. Bought cool whip and used almost the whole container after spreading half the puddng mixture between the layers of cake. Everyone loved this! It looked beautiful too.

Heart Healthy Burrito

So good and easy! Used whole wheat wraps, steamed brocolli, whole grain rice and a ready made chicken! Added some teryaki sauce and melted cheese over the whole thing, husband and I loved these.

California Grilled Veggie Sandwich

My husband seemed disappointed when I told him we were having grilled veggie sandwiches for dinner, but when he tasted this, he was totally delighted! Now I make them fairly regularly, with a couple of modifications: I add fresh basil to the mayo. I also use ciabatta (sp?) bread and make paninnis using my Pampered Chef grill pan and paninni press. Takes like a restaurant-quality sandwich!!

Mediterranean Greek Salad

WOW! My husband and I gobbled up the whole batch in one sitting. I followed the recipe exactly, but then about half way through eating it decided to perform a little experiment and added a splash of balsamic vinegar and a dash of greek seasoning (Penzey's) and it was even better. Can't wait to make it again!

Bud's Potato Salad

The marinade really sets this one apart. I took other reviewers' advice and use about half the mayo. For me, potato salad MUST have hard-boiled eggs and celery, so I add about 4-6 eggs and about a cup of celery (in addition to the celery seed). I also marinade the onions along with the potatoes. This doesn't last long at my house!

This was good, but a little on the bland side even though I took some of the other reviewer's advice. I prefer the flavor of the Coconut Tofu Keema recipe--it's really easy and you could add chick peas to it if you wanted to.

Peanut Butter Noodles

So good and so easy!! I make this all the time, but add a bag of frozen stir-fry vegetables and garnish with lime juice, fresh bean sprouts, and cilantro. Sometimes I also add sauteed tofu (combining this recipe with the Tofu Peanut Stir Fry recipe).

This was so easy and wonderful. I've always been afraid to make Indian dishes because of their intimidating ingredient lists, but to me this tasted like something I'd eat in a restaurant. I used light coconut milk with excellent results.

Orzo and Tomato Salad with Feta Cheese

Made for a bacholorette party and everyone liked this. I made changes tho. I browned my orzo in olive oil, then boiled in chicken broth for more flavor. Omitted the dill and swapped the green olives for black. Added a splash of greek vinagerette too.

Mini Cheesecakes I

I didn't care for the crust, it was too crumbly. I would make a grahm cracker crust next time. The filling was good! Make sure to beat the room temp cream cheese until very light and fluffy before slowly adding the other ingredients. Topped with cherry pie filling and drizzled melted Hersey chocolate. The girls at my party loved these!

Beer Brats

We loved these. Bought store brand brats, boiled in beer and grilled until nice, dark grill marks appeared. Served with corn on the cob. Perfect summer meal!

Black Bean Salsa

good base, i added all the ingredients listed, then added avacado, lime, olive oil, cumin, cayenne pepper and salt. makes a ton! thanks for the post :). I have now made this several times, and everyone raves about it! It makes a ton and can sit out for hours for grazing. The perfect summer salsa.
