Pumpkin Nut Muffins

Fish Tacos

I used tialpia, water instead of beer, and sour cream in place of yogurt. I agree the sauce was great, the fish alright. I just prefer Fiery Fish tacos w/corn salsa from this site instead. Guess I like the "healthy" factor of that recipe better.

Harvested Chicken Stew

This was so quick and easy to make - like other posters, I changed the vegies a bit, added some cabbage, omitted the peas and zuchini, thickened the sauce a little and served it with rice; my kids gobbled this up and asked for more - wonderful quick dish for a cold winter night!

Hearty Hash Brown Dinner

Realize that I live in the land of "hotdishes", this was ok. I added celery, mushrooms and garlic to beef. No veleveta, used cheddar. It desperatly needed salt and pepper, more than just in the bottom. It also needed more of a sauce. With tweeks it was ok. kids really liked it, hubby and I lukewarm.

Too Much Chocolate Cake

I made this for my daughter's 17th birthday becauese she wanted "the chocolateiest cake ever!" I would have to agree - I iced the cake with a not-so-sweet ganache and it was absolutely fantastic. Super moist and flavorful, simple and easy! Kudos! This recipe rocks!

Scalloped Corn

I've tried several recipes for scalloped corn and none compare to this - it is such an interesting and utterly successful combination of scalloped corn and corn bread. I made this for Thanksgiving and my family absolutely adored it - it was the first of the "left-overs" to run out. I'll definitely be making this again . . . and again. . . and again. . .

Day Before Mashed Potatoes

These potatoes turned out amazing! I used chive and onion cream cheese instead of plain. I also made them about an hour before serving and put them in the crockpot (sprayed with cooking spray) on high to keep warm.

Special Buttercream Frosting

This recipe was just what I was looking for. I used it to make my daughter a princess birthday cake. It was great for piping and decorating. I made a four layer cake and there was even some frosting left over. It's probably not the healthiest frosting, but it's okay to eat once in awhile :) Added note: I made this again for a 9x13 sheet cake. If you halve this recipe you'll have enough frosting.

Coleslaw I

I just made this coleslaw for dinner tonight and it was great. I went by other suggestions and used only 1/2 cup of apple cider vinegar. I used 1/2 head of regular and 1/2 head of red cabbage. I added 1/2 tsp of dill. I'll use this dressing for cole slaw from now on. Thanks!

Chocolate Chip Cookie Bars

I'm giving this four stars because I liked the fact that I was low on ingredients yet I was able to make these. I had everything it called for. It did however lack some flavor and were a little dry. I added one egg as suggested by a user. I used mini chocolate chips and those worked well in the bars. It just needed something else. My kids loved making them and were happy so that's what counts!!
