Pork Medallions with Balsamic Vinegar and Capers

These were amazing!!!! I am not a pork fan but had some in the freezer I need to use up so this was the recipe. I am now a big fan of pork and will be making this recipe often. The flavors melded together very well. The capers and the balsamic give it a nice sweet tangy flavor. Thanks for the awesome recipe!

Pineapple Mojo Cake

Great cake - I am not usually a cake mix lover, but had one on hand. I used a 9 x 13 cake pan, and used a 20 ounce can of pineapple rings (because that is what I had in my pantry!) - will try as written next time - easy, delicious & fast. Best eaten warm right from the oven (gets a bit soggy by the next day).

Apple Cake V

I was so dissapointed in the topping for this cake. It was watery and made my cake kinda soggy. Everyone ate it and enjoyed it with icecream, but they didn't know that I poured a whole stick of melted butter on top! I think that this cake is worthy of trying again, with a streusel-like topping. I added 1 teaspoon of cinnamon to the cake, and an extra 1/2 cup of apples.

Alaskan Halibut Lasagna

I have made this recipe twice, both times using chicken instead of fish, with equally tasty results! A great new twist on classic lasagna. Reminds me of an alfredo sauce. This is a very rich, indulgent dish...calorie counters beware! :)

Greek Salad V

Excellent and easy to make salad! I didn't measure the spices or oil/lemon, just eyeballed it, and also used fat-free feta instead of regular. Wonderful, fresh taste! It went well with the other foods I prepared in my Mediteranean-inspired meal last night. Looking forward to the leftovers tonight!

It's Chili by George!!

WOW - adding a few extra spices makes all the difference in an awesome chili. I didn't have tomato juice on hand, so I used a can of diced tomatoes. Also did not have a green pepper. Topped it with cheddar cheese and crushed white corn tortilla chips. Other than that, I followed George's directions and had the best chili I've ever made. Thanks!

Simple Turkey Chili

My BF made this the other night. He followed the recipe exactly and it turned out wonderful! Not too thin ot thick and with just enough spice for zing. I enjoyed eating the leftovers today! It reheats great!

Bread Pudding I

Excellent! A water bath is NOT needed to make this recipe, as others are suggesting. The baking time is a bit off, as it took mine 55 minutes to fully set in my 2 quart Pyrex dish. I used an entire small loaf of Pepperidge Farm's Cinnamon raisin bread, 1/3 cup raisins, butter, and only 5 eggs - following the directions as listed. Also, I used cold milk and omitted the nutmeg. Used melted vanilla ice cream as a sauce and it was a hit! So easy and delicious!

Jalapeno Chicken II

Wow, can I say YUM (and how many times am I allowed to say it?)? This recipe was simple and fantastic. I omitted the itallian dressing marinade step and just rolled up the plain flattened chicken breasts with halved jalapenos stuffed with fat-free cream cheese spread. Wrapped one thin slice of applewood-smoked bacon around each breast and secured with toothpicks. Popped them in the oven for 35 minutes at 375 degrees and then broiled for 5 min. more. FABULOUS!!! My BF couldn't stop talking about them (He loves bacon). Nice flavor and very rich from the cheese. Thumbs up!

Pumpkin Bars I

I baked this late last night since I forgot I was scheduled to bring morning treats for today's weekly meeting at work. I chose this recipe since I had all of the ingredients on hand it had received positive reviews. Well, here comes one more A+ review! The cake turned out great...moist, spicy and delicious. My co-workers couldn't stop raving about it! The only mods I made were to replace the bread flour with AP flour (worked like a charm) and add a bit more spice to it (without measuring): ginger, cloves, allspice, cinnamon and a hearty dash of vanilla. I frosted it with Cream Cheese Frosting II from this website. A perfectly easy bar/cake to whip up on a whim!

Cream Cheese Frosting II

I halved this recipe to frost a 9x13 pan of pumpkin bars (Pumpkin Bars I on this website). Very easy to make, creamy and sweet frosting with a bit of a tang to the taste. Would work well with carrot cake too! Very good.

Chicken Enchiladas II

My family loved these - better than my other enchilada recipe. We prefer the taste of flour tortillas, so no complaints there. I didn't have a can of green chilies - so used a half of a can of diced tomatoes with hot chilies with the juice and omitted the milk. Also used a rotisserie chicken and a added some cooked brown rice to each enchilada. This is my new chicken enchilada!

Pecan Squares Cookies

These were delicious as written, but I found the center ones a bit on the fall-apart gooey side. Maybe they should be made in a 9x13 pan, or make an extra half-batch of crust - OR, maybe I should just bake them longer next time. These will be a MUST at the holidays!

Spanish Rice Bake

This was a great jumping off point. I did feel it needed the spices amped up a bit but that depends on your taste buds. I left out the brown sugar since I was afraid it would be too sweet and it wasn't missed. I also added garlic to it and topped with black olives. The munchkin loved it and asked for seconds. Thanks for the recipe!

Spinach and Feta Pita Bake

These are awesome! I have made these twice with fantastic results. Tonight I used lavish bread in place of the pita and I loved how the edges came to a wonderful crisp in the oven! I didn't have any roma tomatoes on hand, but I did have a package of sun-dried tomato pieces, so I used those in place of fresh. I also do not drizzle oil over the top (to save on fat), but its still delicious anyway!!
