Rigatoni with Eggplant, Mushrooms and Goat Cheese

LOVE LOVE LOVE this recipe! I changed chicken stock to veggie stock and upped the amount of garlic and red pepper flakes. Besides that I left everything the same and I HIGHLY recommend leaving the kalamata olives (it salts the dish so you don't have to use so much salt). This was so good...my man loved it and had two huge helpings. Thanks for such a great recipe!

Argentine Lentil Stew

I was a little skeptical to make this for some friends that we had over due to the unique flavors, but I am so glad I did. It was delicious. They couldn't believe there was apple in it. I always love the aroma of bbq sauce, but never really know how to utilize it being a vegetarian...this stew did it for me and I will be keeping this recipe!!

Lemon Broccoli Pasta

Very easy and quick. I made some changes...I used 2 veggie bouillons in about 4.5 cups of salted water. I also used a clove of garlic grated along with lime zest (I had no lemons). I used egg noodles and I reserved some of the cooking liquid (2/3 cup) right before I drained everything. I then put it all back in the pot, added the liquid, let sit for a minute or so and then added sour cream. I topped with parmesan and some more lime zest. Very good!!!

Spanish Rice II

This is a great recipe. I replaced the water with veg broth. I also roasted fresh corn and added it to the rice at the very end along with some fresh cilantro. Everyone loved it. I will definitely be making this again!

Cauliflower-Cheese Soup

Pretty good soup. I definitley went by the reviews...I used veg stock instead of water. I also boosted up the veggies with broccoli, spinach, jalapeno pepper (we like heat) and garlic. I omitted the celery. I doubled the cheese too. It turned out great. This will be keeper!

Roasted Tomatillo and Garlic Salsa

This salsa goes great in chilaquiles. After reading the reviews I roasted the ingredients in a 450 degree oven and then broiled. I too added onion. I also added fresh lime juice. It was very spicy, but that's how we like it!!

Cilantro Serrano Cream Sauce

This is a really good sauce. I was unable to get serrano peppers, so I opted for chili peppers. I roasted them in a 450 oven...cook on sheet untill blisters remove then let "sweat" in a sealed plastic bag for 15 min. Based on the reviews, I too used lime juice. It went great on black bean veggie burgers with avocado. I can't wait to share this recipe!

Enchilada Casserole

I loved it! I made a few changes after reading other folk's reviews. I added a half can of corn, 1 can pinto beans, and 4 oz light cream cheese instead of the tempeh. I used a lowfat mexican shredded cheese mix and I added a bit of taco seasoning. I'll probably spice it up even more next time. Interestingly, it was even better reheated. Fresh out of the oven I'd only give it a 4, but reheated was a 5. (It's my picture with the recipe now:-)

Avocado Mango Salsa

I love this salsa. I threw all of it in a blender to save time. I grilled portobello mushrooms with some cajun season, salt, and pepper...topped it with the salsa and it was delicious. A great vegetarian entre with some flair!

Lemon Sugar Tea Cookies

This cookie was easy to make and had a nice chewey texture. My kids loved them. For me, they were a little too sweet and not quite lemony enough. Next time I might try 1/2 Cup less sugar and either more lemon extract or lemon zest - or both. :)

Pecan Pie V

My dad's favorite pie is pecan so I thought I'd make it for his suprise 50th b-day party ...first words from him..."WOW" and "Killer". This is a keeper! I followed advice of another woman and cooked @ 300 for appx. 1 hour & 15 min. The crust (store bought)wasn't burnt at all.

These were outstanding. Easy to put together, and made the house smell wonderful. The icing was delicious. We ended up thinning it with a little milk, because we like drizzled icing on cinnamon rolls, but the flavor was REALLY good.

Spiced Pumpkin Seeds

These had great flavor. I was very religeous about stiring the seeds every 5-10 minutes to prevent them from scorching and just provide an over-all even bake. YUM YUM YUMMY! I don't know if there will be enough for my kids to try when they are awake.

Apple Delight

Delicious!!! Definite 5 star here. I did mix the butter and cake mix prior to spreading on top. I think that worked out a lot better than trying to mix over the apple pie filling. Also I sprinkled it with some cinnamon and sugar after it came out of the over. SOOOOOO easy.
