Chocolate Zucchini Cookies

These taste really good with the addition of chocolate chips. By accident used too much shortening so mine are pretty soft. To cut calories, I think it could use less than half cup of shortening and 2 cups of zucchini due to the moisture content of the zucchini.

Yummy Garlic Croutons

I never knew how easy these are to make. To heck with store-bought croutons! I'm hanging on to this recipe. I used sauerkraut rye bread from a recipe on this site, sprayed the cubes with olive oil, then sprinkled with garlic powder and garlic salt. I baked for 15 minutes and they came out perfectly golden and crunchy. I did leave out the basil since I didn't think it would go with my bread.

Sauerkraut Rye Bread

This is some great bread! I love the caraway and sauerkraut flavors. Next time I would probably use even more caraway and try beer instead of the water. I used the dough cycle on my bread machine, then shaped the dough into a loaf, let it rise for 1 hour, then baked at 350 F for 45 minutes. That worked perfectly. Oh, also, I was out of molasses so I used maple syrup. That worked in a pinch but I'd go for molasses next time.

German Red Cabbage

This was my first time eating German cabbage and I found out I don't like it. The vinegar is too overpowering for me. If you do like German cabbage, this recipe would probably work nicely.

Creamy Beet With Dill Soup

This was fine, but just not my favorite way to eat beets. It was better after it sat in the fridge for a day and the flavors mingled. I would suggest rye croutons instead of hard boiled egg as the garnish. The soup had a beautiful magenta color that would be great for Valentine's day if your sweetie likes beets!

Dill Vinaigrette

This is reminiscent of the vinegary dill flavor of dill pickle potato chips. A nice way to get the taste without the fat. I used fresh dill for extra flavor. I'd make this again next time I have fresh dill and salad fixin's on hand.

Veggie Pizza

Great recipe, I used my salad shooter to chop up the carrots and red pepper. Brought it to a party and they were all gone within 5 minutes! I couldn't believe it! I should have made more. Next time I will try using the pizza dough that someone else recommended.

Mango Lassi II

Just what the recipe promised - smooth, creamy, and absolutely heavenly! I used strawberries because that's what I had on hand, and it was delicious. Next time I have mangoes around I will try them too.

Jalapeno Poppers I

Good stuff! Not as crunchy as what you get in a restaurant, but not as unhealthy either! I used less-fat cream cheese and you couldn't tell the difference. One trick is that it's much easier to stuff the peppers if the cream cheese mix is soft. I microwaved it 45-60 seconds and that did the trick.

Healthy Banana Cookies

I made these awhile ago, and they are not bad for a healthy cookie. I think they are a great snack to take to work. It sure is healther than eating a cookie made of lard and sugar.

Adrienne's Cucumber Salad

A great cool, crunchy salad for summer! Tastes a bit like sweet pickles. I changed the proportions a little in an effort to clear out the fridge, and I used fresh dill since I had it on hand. I thought the fresh dill really added to the flavor. This does have a lot of marinating liquid, but just use a slotted spoon for serving and it's all good.
