Light COOL 'N EASY Pie

This is so yummy!! Use sugar free jello and light or fat free cool whip so it's not so bad. Very good. Everyone loved. Will be making again soon.

Swedish Meatballs I

I found this recipe to be extremely bland. I tried to add pepper but it didn't help. Unfortunately, my kids hated it too. It was disappointing; but since this is the first time I've made Swedish Meatballs - I will have to just try other recipes. No offense to anyone, and maybe you'll like the creaminess; but our family loves flavor and this just didn't have any.

Minestrone Macaroni

I really love this dish. I make it without the kidney beans and then sprinkle garlic powder and onion salt over the top. YUMMY!!!! My kids like it because they can pick out what they don't like (one likes green beans the other likes the garbonzo beans). I like it because it's very easy. Usually serve with a bowl of fruit and garlic bread.

Fresh Cherry Crisp

This was my first attempt of baking with fresh cherries, and it was wonderful! I cut the recipe in half since there were only 2 adult and 2 children eating it. I used 2 1/2 c. cherries and added a tsp. of cinnamon to the topping. Very good! I think next time I will add even more cherries. This recipe is a keeper. Thank you!!

Whole Wheat Banana Nut Bread

This was very good. I made it as listed, but I added about 3/4 c mini chocolate chips and an extra 1/c cup bananas. Came out very very moist. So moist that it falls apart when I cut it. I had to bake it for about 70 minutes and it came out nice and brown. (baked it in a glass dish at 325). Kids love it. Will be making it again. I think next time I will make it with applesauce to make it even more healthier.

Lisa's Chocolate Chocolate Chip Cake

Excellent!! I made this for myself for my birthday, so I made it exactly has written. When cooled my son poured some melted frosting over the top and then I dusted with powdered sugar. Very very good. My husband said that it is the best chocolate cake he ever had. This probably will be a birthday staple from now on. The one thing I will do differently next time is put some more mini chocolate chips on the frosting before it cools. Very very good cake. Thanks for the reciep.

Hawaiian Baked Chicken

This was just ok. Probably won't make again. Followed the recipe exactly (usually do the first time around) and it was very soupy. Maybe if I do make t again, I will use breasts and add some cornstarch to help thicken it up. Kids liked the chicken alright, didn't care for the sauce over rice.

Sweet and Sour Chicken III

I love love love this recipe. One of my favorites. I use one large can of pinapple (20 oz) and double the sauce. I also use low-sodium soy sauce so it doesn't get to be too salty. Have made this many times and will make many many more.

Cranberry Phyllo Triangles

I made the choc/pecan kind. Very easy to make. I used untoasted pecan cookie pieces. At first taste I wasn't too impressed. But after a couple days they were so yummy I couldn't stop eating them. My 4 year old really liked them too. I will be making them again.

Enchilada Stuffed Shells

Very yummy! Used lean ground beef instead of turkey (my husband doesn't like turkey). Topped with sour cream and served with mexican rice, very delicious. My husband and I both agreed that it would be even better topped with some pico de gallo and maybe a little shredded lettuce. Kids loved. Will be making it again.

Caramel Pudding Cake

This was just so-so. Way too sweet. The sugar/water mixture didn't get soaked up at all in the cake so it ended up really liquidy. Cake had pretty good flavor. Probably would add nuts and cinnamon next time.

Baked Lemon Chicken

This was very good. Followed the directions except used thin cut chicken breasts. Didn't come out crunchy, but it was still very tasty. Whole family-4 year old and 2 year old included- loved it. Next time I think I'd make more of the lemon/butter mixture. It turn out as lemony as I would have liked. Still was very good. Will be making it again.

Garlic Parmesan Orzo

This was sooo good!! I cut the recipe in half and used a lot of garlic (about 2 tsp. of the jared minced kind). It tasted like something you'd get at Olive Garden. A creamy, cheesy, and very garlicky sauce. Will make many many times.
