Coconut Cream Pound Cake

Since I love coconut a TON, I used this instead of regular pound cake in trifle. It was fantastic, and everybody raved about it. This pound cake makes an excellent layer cake - just top it with coconut cream cheese frosting, and I guarantee that people will love it! I do it all the time, and people always ask for the recipe.

Coconut-Cream Cheese Frosting

AMAZING RECIPE! Since I didn't have any coconut flavoring, I used some extra shredded coconut. Absolutely delicious! I use this on many cakes - carrot, white, yellow, coconut cake, coconut pound cake - everybody loves it! If you are looking for an all around good frosting that can be used on many cakes, this is the one! It is FABULOUS! You must try it.

Chicken Riggies I

Ok, I made this, and NO ONE, I repeat no one in my family liked it. I'm gonna make it one more time with different spaghetti sauce and different alfredo sauce - maybe I used bad quality sauce? I'm wondering why nobody liked it, as this recipe got some pretty good reviews! Anyways, wish me luck!

Spinach Tortellini Soup

The first time I made this, I followed the recipe to a T. Wayyyyyy to bland! I would have given that three stars. What made me give this recipe four stars is the fact that it has potential and because it is a good base recipe. The second time I made this, I used beef broth (I was out of chicken broth at the time), 1/2 T. garlic powder, 1 T. dried basil,, 1/2 T. oregano, a 14.5 oz. can of diced tomatoes, 1/2 t. ground black pepper, 1/2 t. salt, a package of tortellini, shredded carrots and zucchini, and lots of spinach (could barely taste it the first time). That tasted really good, but it was still missing that special spark that makes a recipe unforgettable. If I was in a rush to make dinner, I would make this. Otherwise, I'd follow another recipe. Oh, and I almost forgot to mention, I would advise NOT putting the tortellini in the soup. I would cook it separately, then add it to the individual bowls. Otherwise, they soak up all of the soup.

Get a Husband Brunswick Stew

None of my family members liked it. I really disliked the sweet taste of the soup. Second of all, besides having a bad taste, it was very bland ingredients wise. I definitely wouldn't make this again as a soup - however, I think it has potential as a dip. If I decreased the liquid, added more salt, and changed a few things here and there, I think this would be a decent dip.

Vegetarian Cottage Cheese Patties

My step-son who's a vegetarian was visiting, so we decided to make the cottage cheese patties together. I had my doubts, but they were actually VERY good!! I'd coat them in seasoned bread crumbs to hold their shape. The entire family enjoyed them and they were a welcome break from red meat. Thank you!

Al's Quick Vegetarian Spaghetti

This recipe didn't read right without spices, so I just added what I usually do to sauce. The corn/carrot combo didn't work for me - thought it was interesting and I'd try it, but should have known better. The mushrooms and broccoli were very good. Nothing out of the ordinary here I'm afraid.

Apple Cider Sauce and Pork Loin Chops

The taste seemed a bit "off"....I like applesauce with pork chops, so thought the cider would give it a rich flavor. I felt it was more of a sweetened pork flavor. The onions were a hit, but I'd pass on the cider next time and stick with apples on the side.

Layered Chicken and Black Bean Enchilada Casserole

I think I'd use salsa rather than enchilada sauce next time - it was a bit bland for my family's tastes. I baked the corn tortillas which kept them crisper than they would have been had I not baked them. Will tweak this a bit next time - great basic recipe!

Chewy Coconut Bars

This is a good recipe, but it is missing a few things. First of all, 1/2 cup of coconut is definitely not enough. I made these for a party, and I asked for everybody's opinion, and they all asked me why I called them Chewy Coconut Bars, as they could not taste the coconut. So, next time, I added 2 1/4 cups of shredded coconut, decreased the packed brown sugar by 1/4 cup, used 2 cups of milk chocolate chips (semisweet works fine too, but not as sweet. I substituted milk chocolate because I did not have semisweet on hand), used 1 cup of toasted chopped pecans, and substituted margarine for the shortening (I didn't have any shortening). That time, everyone raved about the bars. Thanks for the recipe though!

Garlic Prime Rib

Great rub on the exterior and the prime turned out perfectly! An 11 pound cut took nearly 4 hours to cook to medium rare however, so either my oven or the time stated are off a bit. Be sure to have a trustworthy meat thermometer for perfect results. Excellent recipe!

Cranberry Salad III

Seven Layer Salad

This is a favorite in our family. I "thin" the mayo (1/2 mayo, 1/2 Miracle Whip) with milk as it's a bit thick if the recipe is followed. I also use an iceberg mix with darker greens for better nutritional value as others have stated. Fresh shredded parmesan really stands out in the dressing. Wonderful !

Berry Trifle

I'd give this recipe five stars if it did not get soggy so quickly. However, this is a great recipe. I do not drink alcohol, so I always use a bit of orange juice or a bit of berry syrup (Smucker's makes one I believe) instead. I have discovered that the oj or berry syrup maximizes the flavor of the berries, whipped cream, and custard. I would recommend starting with just a little oj or berry syrup on top of the pound cake, as the cake got soggy for me the next day (and that was when I did not even put a lot of it on). This is a great crowd pleaser, but I would be hesitant about making it a day ahead - you might have a watery, gooey, mess. I will say that if you put it in the refrigerator for four to six hours after you are done assembling it, it looks and tastes divine (that is the best time to serve it for sure). This is one of my favorite desserts to serve at parties! It is a huge crowd pleaser (and it serves a TON of people too, so that's even better. ;) less work for me!).

Fabulous Foolproof Lasagna

I made this for dinner tonight and it was wonderful! I omitted the meat and just made a cheese lasagna & it turned out great. My husband and I loved it! Like others had suggested, I used 2 jars of tomato sauce and it was JUST enough. This lasagna turned out so much better than the last recipe I tried. It's very easy, and we loved it because it wasn't sloppy. The layers stayed together when we served it. A+

The Perfect Basic Burger

I was somewhat hesitant to try this recipe after seeing that it had only 3.5 stars (I know, 3.5 - I don't like wasting food). However, I tried it, as I wanted a plain burger that I could top with ketchup, mustard, onions, and pickles - in other words traditional toppings. I'm not one for fish burgers or anything gourmand-like like that. To the user that said that this burger was tasteless, I would say that the burger would be tasteless by itself and with no condiments. However, I added a slice of cheese (let it melt a bit under the burger patty), pickles, ketchup, mustard, a couple slices of onions, and wow. It was great. Let me just say that I won't be going to Burger King for a while. This burger tasted great - it tasted so juicy and meaty! I had one for lunch and one for dinner. Deelish.

Strawberry Limeade

I followed the recipe to a T, except I used whole frozen strawberries (I'd have to thaw them to be able to slice them) and used 6 small ice cubes. It wasn't sweet enough with 1/4 a cup of sugar, so I stirred in a bit of honey into each cup before serving, and it turned out great. Without the honey, the limeade was missing some flavor.
