Jenn's Out Of This World Spaghetti and Meatballs

Made these meatballs for meatball subs. Delicious, subtle flavor. Had to use dried herbs, still fresh and wonderfully flavored. Wow, even my husband, who has never liked my homemade meatballs, liked them!!!

Traditional Salisbury Steak

Reviewed: Jan. 29, 2008
After a few bites of this, (and me holding my breath!) my husband declared "you have a winner here." This is real comfort food! The flavor is subtle, but rich. I served it with mashed potatoes and corn. I did use reduced sodium beef broth instead of water and boullion. Wonderful!!!!

Bacon Jack Chicken Sandwich

Reviewed: Jan. 9, 2008
These were great! I sliced the chicken breasts in half, rubbed them with the poultry seasoning, then I brushed them with olive oil. I baked them 10 minutes per side. I added the pepperjack and bacon, then baked an extra 2-3 minutes. Yum! Thanks!

Had some off brand PB to use up, forgot the vanilla, and they still turned out crazy good! Had about 6 PB balls left, the kids didn't mind taking care of that:) Great concept, next time I will use Jif and put the vanilla in! thanks

Beef and Bean Chimichangas

Reviewed: Dec. 11, 2007
Excellent, Excellent, Excellent!!! Such fresh flavor, not too tomatoey either! The perfect combination. I had this recipe printed out in my box for at least a year, finally tried it. Amazing!!! Thank you!! Left out the corn per taste, also used it for enchiladas instead of store bought sauce. Just cooked the sauce ingredients seperate from the meat, mixed 1/2 in and poured 1/2 over the filled, rolled tortillas. Thank you for the awesome recipe!! Making them tomorrow with roast beef!

Best Chocolate Chip Cookies

Reviewed: Dec. 4, 2007
Wow!! I have never been able to make a good choc chip cookie. That being said, these turned out great!! I followed the recipe to a T, measuring exactly. I think that has been my problem in the past w/cookies; not measuring exactly. Perfectly crispy, yet soft and gooey in the middle! Thank you! 5/13/08 made these again and they didn't turn out as well, which is my usual problem with CC cookies. I make them a couple times, they are great and then the next time, not so great! I don't know what I am doing wrong. I use pure vanilla, large eggs, real butter, and all purpose flour.

Tasty Meat Pie

Reviewed: Nov. 28, 2007
Did this as is and it was very good. For the crust, I used frozen pie shells in which I filled one and flipped the other on top of it and sealed. We are going to make revisions for the next try as we both thought the taste was similar to a pasty. I'm going to use less carrot/potato so that I can add some rutebega and will use a ground beef/sausage mix. It will be awesome. Thanks.

Tuna Pita Melts

Reviewed: Nov. 28, 2007
These were very good and a different way to enjoy a tuna melt. I added an extra Tbs of mayo to the mix and topped it with more cheese. I also only toasted the pitas for 4 minutes and they were just fine. Thanks.

Sweet Potato Pie I

Reviewed: Nov. 28, 2007
This was just not a recipe that we liked overmuch. I made it with a few of the previous review revisions, and it looked and smelled good. My son thought it was good, but we thought it was just too sweet and the texture was not something we cared for.

Rhubarb Strawberry Crunch

I made this as requested and he loved it. I'm not one for rhubarb, but I did taste it and it wasn't too bad even for me(I confess I only had one bite to base this opinion on). I put 4 cups of strawberries & rhubarb in it. Turned out very well. Thanks.

World's Best Lasagna

Reviewed: Aug. 29, 2007
This was great, though needs a bit of tweaking to one's taste. Basically, for us, it needed way more cheese. I added extra ricotta, parmesan, and mozzarella(used shredded) and in the end I wish I had used even more for the top. I used a full lb of burger with sage sausage. I did not add fennel seeds or most of the salt. I cheated and used oven ready noodles. Next time I will reduce the sugar in half or not add it because it made the sauce a tad sweet. I put this together a day ahead and it was very good the next day. Thanks.

Chicken Salad Wraps

This was very tasty. Daughter whipped these together for a quick dinner. She used grilled chicken instead of can, green onions instead of chopped onion, and the mayo. We liked them so much, we made them again the next day. Thanks.

Snow Tunnel Cake

Reviewed: Aug. 29, 2007
I thought this would be an interesting cake to make for my daughter's birthday. The cake was great and as was the filling, but some only liked one part or the other. I also changed the whip topping frosting for marshmallow creme as I was begged to do so, and it was a bit of a disappointment that I did because the creme literally ran off the sides even though I put it in the refrigerator. It moved all my decorations! I put m&m's on the top and sides and hershey squares on top. I sliced strawberries for around the bottom of the cake. Again, if it weren't for the creme I used, it would have been fine. Either way, I will be trying this again. Thanks.

Cookies 'n Cream Cake

Reviewed: Aug. 26, 2007
My first ever layer cake and it was a mega-hit! I made this for my son's birthday and it didn't last very long. I made a few changes by using chocolate fudge cake mix and adding an extra 1/2cp of cookies to the mix. Also, I made some oreo pudding that I used in between the layers instead of frosting. After I frosted the cake, I pressed oreos into the side of the cake all around and made an oreo M(1st letter of his name) on top and added colorful sprinkles. Everyone loved it. Thanks!

Southern Peach Cobbler

Reviewed: Aug. 1, 2007
This was fantastic! My fiance loved how it tasted like a snickerdoodle. I used fresh peaches and doubled the crust. I added a hint more cinnamon and a splash of vanilla, too. I baked the cobbler at 400 degrees for 20 min and 425 degrees for 10 min. It was wonderful. Not to sweet and the peaches were just right-not mushy. Excellent, thanks.
