Pico de Gallo Chicken Quesadillas

This recipe is fantastic!! Best quesadillas we've ever had. Easy to make, tasty. I made them Saturday for the first time for a group of 4 and everyone loved them. All I did different was to add chopped garlic to the pico and used both monterrey jack and cheddar cheese. These were great reheated the next night as well. Served with sour cream, homemade guacamole, mexican rice from this site and banana margaritas later in the evening...a perfect Mexican Fiesta! Also served the pico with chips and that is great too. Thank you for sharing.

Crazy Crust Pizza Dough

Chocolate and Almond Biscotti

SOOO Good! I do, however, have some tips for newbies (I myself was one when trying this recipe) 1. Have faith that the biscotti will harden when it cools... it also cuts better when cool. 2. Like the other suggestions, chop half the chocolate chips up in food processor with half the almonds... it gives nice color! Thanks for a great recipe!

Pumpkin Roll Cake

This is a great pumpkin roll. Even my kids will eat this. I do not make it on wax paper as it has tended to smoke in the oven. I use parchment paper and that seems to work very well.

White Bean 'n' Ham Soup

I rate this recipe a 4, because it was a good start but I felt it needed more. I made the following changes. I used a left over ham bone and cooked that in half water/half chicken broth and cooked for 1 hr. Then added veggies, beans and spices (added garlic) and cooked another hr and then removed ham bone and added ham pieces along with 4 chopped potatoes. I let this cook pretty much all day. I didn't mash the beans since it cooked all day it thickened up nice especially with the starch from the potatoes. It had a nice smoky ham flavor. It was even better the next day

Oatmeal Carmelitas

This was a really nice cookie/bar recipe. I did double the crust ingredients to make a 13x9 pan and left the topping ingredients the same. It was time consuming in regards to having it set up to cut. I originally was going to make these for a cookie exchange (11doz) but considering how much time was needed to have these cool and set up I decided against it. It is a great recipe though.

Chocolate Peanut Butter Fudge

I only stirred the darn stuff 3 times and it was still a teeny tiny grainy. Maybe my boiling wasn't "rolling" enough... I didn't want to overcook it. This was my first time making fudge alone, and I do not have a CT. My mom said the top would look "quilted" and when I had it on a rolling boil it did. ONE TIP: use a big pan because this recipe really PUFFS up big when you first heat it. I also went a little crazy with the peanut butter and added like 1 1/4 cups. As far as I can tell it only added to the creaminess. It's cooling right now... hope i didn't overcook it!!! Fudgemaking is a fine art we all should learn to do. Maybe Santa will bring me a CT!!!!

Herbed Potato Soup

I just made this soup this morning. The kitchen smelled wonderful. I would highly recommend this soup...I did add celery, garlic and carrots and cooked the potatoes in chicken broth. So yummy on this freezing cold day.

Awesome Slow Cooker Pot Roast

I made this on a cold winter Sunday...It was great comfort food. I did make some changes...only because it is just my husband and myself. I used a 3 pound roast, cut the other ingredients in half, added potatoes, carrots and onions and later on added a bit of flour to make it thicker. It was awesome! Great flavor.

Cinnamon Cookies II

At first I was a little leary about making these...I have never even seen molassess before. But my husband loves cinnamon and ginger snaps, so I thought what the heck. I am glad I did. They are absolutely wonderful! Also...very easy to make.

I have the same recipe from my mother-in-law. It's my old quick make desert, because it takes no time to put together. I tend to only use chocolate chips, and I do use a whole bag, and it turns out wonderful.
