Grandma's Tomato Soup

Eggplant Au Gratin

SOOOO good! My hubby and I are trying to eat healthier, and this is a great way to start! I found the eggplant a little spongey for my liking, so the next day I microwaved the leftovers for a while to make them softer. It was a lot better after I over-cooked it. Next time I will leave it in the oven 10-15 mins. longer. Thanks for the recipe!!!!

Split Pea Soup with Rosemary

I left out the leek, used sandwich ham, and got MEGA compliments! I took some advice and used half broth and half water, and still needed to add salt. If you like peas, this is SOOOO GOOD!

Summer Squash Casserole with Nuts

This was good, but it was an "interesting" texture. For the mayo I used Miracle Whip, sour cream and cream cheese... and it was just okay. Very tangy. My hubby surprisingly liked it! This also fills you up really nicely. Thanks for a good veggie dish!

Stove-Top Macaroni and Cheese

I made this recipe the other night. After reading some reviews on here I decided to add more shredded cheese than required. I added about 4 1/2 cups of cheese instead of two. I also added about two and a half cups of milk. The finished dish was excellent. This recipe is very simple to make and if you add more things to it such as the increased cups of cheese I don't think you will be disappointed. It was very delicious.

Mushroom Pork Chops

I adapted this recipe for a slow cooker. I followed the directions for browning the chops and then I added it all to a slow cooker and cooked on low for 4-5 hrs. It had a real nice taste and the chops were very moist and tender.

World's Best Lasagna

I really really liked this and so did my husband and 3 yr old daughter. The only reason I didn't rate this a 5 was because I didn't have any basil (thought I did) and I took other reviewers suggestions and omitted a lot of the salt and I didn't add sugar. Because there's only 2-1/2 of us, I put it in two 9x9 pans, one was a Glad ovenware. I froze the one in the Glad container. I found by doing this there was enough sauce but I would double the Ricotta there wasn't enough. I used Italian blend shreaded cheese about 12 oz. It turned out good. I didn't add the top cheese to the frozen one, I'll add it when I cook that one. I did have to use about 14 noodles by using the 9x9 pans. No big deal because the normal lasagna box has about 20 noodles. I also just soaked the noodles for 30 minutes like another reviewer suggested. Finally we had to run to Home Depot while the sauce was cooking so I put it on low and it cooked for about 2 hrs total, it was fine.

Maine Venison Stew

OK so I haven't tried this recipe yet but plan on it, however I do frequently make stew in the crockpot with our venison. I've taken recently to adding a package of dried brown gravy mix to the crock pot and it somehow thickens up the liquid nicely.

Tasty Buckwheat Pancakes

These are so good! My hubby adds a couple Tbs. of sugar to give it sweetness. We just used normal canola oil though. The buckwheat gave it a nice crunch though! Thumbs up!

Impossible Coconut Pie I

My mom has been making this for years, I call it Mrs McClure's Coconut pie. She was a neighbor a the cabin that gave my mom the recipe. It's fast and easy. I have cravings for it sometimes and it brings back wonderful memories of my childhood.

Hot Chai Latte

SOOOO GOOOOD! I cheated a little... I just used a Tazo Chai tea bag, heated up half milk and half water, added 2-3 tsp of water, sipped, and relaxed. I actually added a little vanilla to sweeten it too. Thanks for the tips!

Perfect Sesame Chicken

To cut down on fat, I baked rather than fried this chicken, and it was still to die for! I followed all directions except when it came time to put them in the olive oil, I put them on my stoneware pan with all the marinade (which made for a nice breading) drizzled 1/4 olive oil over top, and baked at 375 for 47 minutes. I turned the chicken half way through baking. The dipping sauce thickened up just perfectly! I only used 1/2 cup of sugar and it was still plenty sweet. Thanks for a great recipe, my hubby loved it!

Stuffed Jalapenos III

my husband made these for our superbowl party... they were a hit! Some helpful tips: The grease from the bacon drips a LOT, so use a pan with sides in the oven to avoid a mess. Once they cool down they loose spicyness, so eat them hot! They shrink quite a bit, and the color will fade. They are not as nice as I'd hoped for presentation. Overall, awesome, very manly, and delicious!
