Buckwheat and Bacon Side Dish

The bacon is so good! Doesn't make a whole lot by our American standards, but this could be a main dish for 2 people. Careful about wolfing this down too fast... the buckwheat is SOOOO filling, you could get a tummy ache! Thanks for the great recipe!

Salsa Corn Chowder

I added 1 chicken breast (chopped), LOTS of spicy peppers, replaced half the corn with creamed corn, and the BEST addition was a can of black beans, rinsed/drained. Then I cooked it to smitherenes~ the husband and I polished it off in one lazy day of movie watching! WONDERFUL recipe, thanks!

Easy Oatmeal Cookies

These were great!! Did not get anywhere near 48 of them and they went as fast as I could bake them. I did not have nuts so added coconut which worked out well.

Crispy Cucumbers and Tomatoes in Dill Dressing

LOVED IT! I have made a similar recipe before with just the cucumbers and with white onions. But I love that this one has tomatoes and red onion. It was a nice twist and more healthy and delicious!

This was really good. The pork was very moist and tender too. The only thing I would change next time is to cut back just a touch on the sage. It was kinda overpowering, but still delicous!

Asian Beef Skewers

Hello!!! This was wonderful. I followed the recipe exactly. I was hesitant to use flank steak at first because I thought it would be tough, but it melted in our mouths! I think the fact that I marinated it overnight made it more tender. When I make this in the future I may add a little honey to the marinade. I like a little sweetness to my asian food. Either way, this recipe is something I will make again and again. My husband loved it too.

Honey Mustard Grilled Chicken

I followed the recipe exactly. I was skeptical about the steak sauce, but after tasting it, now I get it. It was perfectly delicious! And it did cause the chicken breasts to be nice and tender and moist. I do recommend making double the sauce though. The raw chicken really holds on to it when you initially dip it. Then you need more for the basting, and then you need more for dipping the finished chicken into. At least, that's the way my family wanted it!

Southwest Chicken

This was absolutely delicous! Although I wanted more of a stew so I substituted the black beans for diced potatoes. I also added and extra can of green chilies (yum), extra cumin, and some snipped fresh cilantro. Obviously to make it more like a stew, I also cut up the chicken into bite size pieces. I know I changed it a lot, but I was great.

Fancy Potatoes

Deeelicious! So simple yet so good. I loved that you used real whole potatoes, instead of frozen like all of the other potato casseroles. A bag of potatoes is far less expensive than frozen and healthier. The only alterations I did was instead or garlic salt, I added a packet of dry onion soup mix. I also did not totally mash it because I knew my husband would like it chunky with the skins still on. My husband was in heaven.

All Day Apple Butter

This was really good and soooo easy. I did take some suggestions and modified it a little bit. I have no idea what kind of apples I used because they were from our tree and they were planted before I moved in. But I used 15 apples, 1 c white sugar 1 c brown sugar and pumpkin pie spice (to lazy to find my ground cloves). I did cook it all night, when I stirred it up in the morning the apple chunks on top got much smaller. I used an electric mixer to smooth it out. I canned it in a hot water bath for 15 minutes (partyly because I'm pregnant and didn't want to worry about what my trees might hold). I got 3 12oz and 3 8oz jars.

Garbanzo Bean Chocolate Cake (Gluten Free!)

I am able to eat gluten, and still thought this was through the roof delicious. It's so simple, I've recommended it to 2 gluten-free friends. The only thing I did was add a little vanilla. The 2 teenagers from my church douldn't even tell anything was different about it!

Cocoa Oatmeal Cookies

I'd rate this this a 5 except I added about a tsp of cinnamon, and used chocolate/carmel chips instead of raisins. I had thought about using dried cranberries instead of the raisins anyway. I'll try that next time. I love the chocolate flavor in the dough, not just the chips.
