Light Oat Bread

Reviewed: Jul. 10, 2008
ALL 5 star reviews? I can see why! This is one the BEST bread machine recipes out there! Moist, flavorful, nice crust. I even substituted a cup of whole wheat for the all purpose flour and it just turned out pefect. I made a small loaf of bread and dinner rolls and my husband just loved it. Many THANKS for this wonderful recipe.

Chewy Crispy Coconut Cookies

Reviewed: Mar. 18, 2008
OMG these are soooooooo yummy!!! I just pulled these out of the oven and wow they are awesome! I did use sweetened coconut and added some white chocolate chips. I baked them for 12 minutes on my pampered chef stone and let them sit for about 5-10 min's when I pulled them out. I then transferred them to my cooling rack but of course had to taste one while it was still warm. Very very yummy!!

Oat Waffles

Reviewed: Feb. 26, 2008
These were great! I didn't have the oat flour so I used the tip at the bottom of this recipe and ground up oatmeal. Everybody loved these!

Authentic German Potato Salad

Reviewed: Feb. 26, 2008
It was very very yummy! I made a triple batch for my husband's german themed birthday party. Everybody LOVED it! I usually make all low fat foods so this was definetely an indulgence for us. But every once in awhile is ok.

Dill, Feta and Garlic Cream Cheese Spread

Reviewed: Feb. 24, 2008
It was ok. Mine seemed very hard for some reason and not very spreadable. I used low fat feta so maybe I needed more seasoning or something.

Easy Microwave Chocolate Cake

Reviewed: Jan. 30, 2008
I thought this was pretty bland and I even added a bit more chocolate and sugar. It got hard pretty quick too.

Tofu and Cheese Stuffed Shells

Reviewed: Jan. 25, 2008
I loved the fact that the tofu blends in so well with the cheese. The final product was rich but not heavy, which was a very nice change from traditional stuffed shells. I'm a lazy cook, so I used a store bought-spaghetti sauce instead of making my own and it worked just fine! In addition, the next time I make it I will skip the carrots and saute rather than boil the vegetables. The carrot did not work for me at all; I'd rather go more traditional and use spinach instead. I don't like to boil broccoli because I think that enhances its natural bitterness and nobody in my house likes that smell! My family really enjoyed it, and it made so much I gave some to a single co-worker; she loved it! Thanks for a tasty way to incorporate tofu into my meal repertoire!

Garlic Chicken

Reviewed: Jan. 18, 2008
Very easy, & delicious! I served it with rice pilaf and steamed veggies on the plate, with a glass of chilled piesporter, and my wife LOVED it. During prep, the last chicken breast didn't get quite enough of oil or coating, so next time I'll adjust the amounts up a little bit.

Pasta Lasagna

Great taste! I doubled the receipe and used one large lasagna pan, and it worked perfectly. Makes great leftovers, too! You can perk up the ground beef by adding some garlic, onion, and mushrooms too!

Chicken Nuggets

These were great!! I think next time I'll skip the butter and use the milk and vinegar idea that someone had mentioned previously to save some calories. But they were very very yummy!

Taco Dip I

Reviewed: Dec. 23, 2007
I made this for a work potluck and it went over very well! I added premade guacomole after putting in the cream cheese and sour cream mixture. I did beat that as others had suggested and it did not have any cream cheese lumps in it. Great dip!

Very very yummy!! I used Miracle Whip b/c that's what I had on hand and everybody LOVED this one! Super easy to make although it seemed to need about 10 more min's cooking then what was required.

Tuscan Turkey Sausage Soup

Reviewed: Nov. 5, 2007
I had some butterball cooked turkey sausage that I wanted to use up. I chopped it up and put it in with all of the ingredients. I did not have a leek on hand so I used a box of chopped spinach. I also did not have great northern beans and used white kidney beans instead. It turned out very yummy and was perfect for the cold fall night we had!

Apple Breakfast Bread

Very easy to make and tasted wonderful. I did do 1/2c brown sugar and 1/2c white sugar and baked it for an extra 10 minutes. Other then that it was great.
