Chili - The Heat is On!

sure the heat is on, but the thermostat is definitely set at a reasonable level and everyone is plenty comfortable. we used the last portion of the chili in a baked spaghetti dish that was just plain dirty in a XXX way, especially after shredding about six ounces of Tillamoook extra sharp cheddar cheese over it before it went in the oven. yeah, you heard me. don't EVEN pretend you aren't fantasizing about going home and doing the same, either. I know you want to!

Campbell's® 15-Minute Chicken and Rice Dinner

This was really, really bland. I even added salt, cayenne, garlic and onion powder and chicken bouillon and it didn't stand out. I was really disappointed, because it sounded so good when I read over the ingredients.

Pumpkin Curry with Lentils and Apples

This is delicious and filling and perfect for the turn in the weather! I failed to recognize I was out of carrots so those were missing and I decided to use a Kabocha because it was right there in the produce area looking good. Otherwise, I fudged some of the proportions due to making a larger batch and simple preferences, but kept it pretty close. Very tasty dish will be repeated with great joy and frequency!

Easy Pumpkin Muffins

These are so ridiculously easy and the absolute best pumpkin muffins I've ever had! I used a white cake mix, and used pumpkin pie spice along with cloves and a teaspoon of vanilla extract. I like it spicy! Make sure you pay attention to the shape of them when you fill the cups because they don't expand much and whatever shape you made them is pretty much how they stay! A definite keeper!

Glazed Apple Cookies

I made these for my daughter's class apple tasting event. I left out the nuts and used butter (I avoid working with shortening if I can). I shredded the apples so I could squeeze the ever living daylights out of them so the dough didn't end up too watery. I don't know what size cookies these are supposed to be that it only makes 18, but I got 3 normal sized cookies short of 5 dozen. They're good. Definately sweet enough without the icing.

Blueberry Sour Cream Coffee Cake

YES! This is fantastic! I just pulled it out of the oven 15 minutes ago, had a couple bites and ran to the computer. I made some changes out of neccessity, since running to the store with a 7 and 8 year old and a 3 month old wasn't on my priority list. That being said, I won't hesitate making this as written next time when I have all supplies on hand. I had to use 1 cup white sugar with 1 cup brown. I used frozen mixed berries. And 1/2 cup sour cream, 1/2 cup plain yogurt. Delicious! This won't last long in our house :)

Surprise Banana Cake

I took another person's advice and made cake flour, which does give it a nice texture. Cut flour to 1 3/4 cups, and add 1/4 cup cornstarch. I added eggs, vanilla and bananas to creamed mixture first. Mix dry ingredients together then add the dry ingredients a little at a time to the wet ingredients. I did not use unsalted butter, just salted butter, but the salt level was fine. I found the 30 minute time to be on the dot. You can add another banana or a little milk if the batter seems really thick, but I made a double batch using 9 large bananas and they turned out perfect. I frosted them with Buttercream frosting from this site and took one cake to church tonight and it was a HUGE hit! We only had about 15 people and I think they would have eaten both of them if I had taken both with me!

Buttercream Frosting

This is also yummy with almond extract! My mother used to be a cake decorator and this is just like hers! For a flawless finish, use shortening instead of butter, and use a metal spatula with a smooth edge. Let your frosting dry. Dip spatula in VERY hot water and smooth frosting, wiping spatula frequently. It will end up almost as smooth as fondant and be a beautiful canvas for your handiwork!

Slow Cooker Pork Chops II

Delish! I didn't use the oil, though, as I'm trying to cut down on fat. I just upped the broth the extra amount and towards the end, I stirred in a little fat free sour cream to make a yummy gravy. These go well with egg noodles, rice or potatoes! Definitely not the ordinary crock pot recipe!

Cream of Mushroom and Soy Sauce Pork Chops

The sodium content scared me to death, so to lower it, I used low sodium soy sauce and low sodium soup. I also didn't marinate mine in the soy sauce, but coated it lightly after the brown sugar was put on. I used four nice thick chops and cooked it a long time (7 hours)and it just fell apart. And because it's meat, I just had to add a little garlic...Very good!

Whole Grain Bread Pudding with Caramelized Bananas

I just pulled it out of the oven 5 minutes ago and hubby ate two bowls of it already! I used toasted white bread, as I had no wheat bread. I also added 1/2 teaspoon each of nutmeg and cinnamon. I baked it in a casserole dish instead of individually, and had to bake it for 1 hour, 15 minutes. It needs something, though, perhaps butter.

Scaled this to 80 servings for a work function. Definitely the best baked beans I've had. Really enjoyed them. Admittedly, we made the decision to not drain off the excess bacon fat because, honestly now, is there a such thing as excess when it comes to bacon fat? Pat, you're a bacon and bean hero!

Bran Muffins I

I brought the servings down to 18, and it made 24 in regular cupcake pans. These are delicious. Only thing different I did was add 2 boxes of the individually packaged raisins to the mix since there wasn't a whole lot in only 1 cup of rasin bran. My boyfriend was happy when he got home and took a bunch to work with him today. Even the kids are eating them up!

Cowboy Oatmeal Cookies

I usually can't make an oatmeal cookie without screwing it up. In fact, after my last attempt, I vowed to give up trying my hand on oatmeal cookies. These though, these turned out perfect! I waited till the morning after to review to see if they're still chewy, and they are! I seperated the dough in half and used raisins for one half for my boyfriend and used the butterscotch chips for the rest of us. Perfect! These are a keeper.
