Banana Crumb Muffins

I love these muffins and so does my whole family! I always make at least a double batch, and they never last long. These are our favorite breakfast treat and I always make them for overnight company. A "must try"!!!

Caramel Apple Bars III

Basic Hummus

Everyone really liked this. I did have to add MUCH more (almost one whole can's worth) of liquid. Maybe it's because I doubled the recipe. Tasted yummy and you can add whatever you want. I added some hot sauce and chipotle powder for a little kick!

Pretty Chicken Marinade

Great basic marinade. Don't need all the soy sauce, just add to taste. Didn't have liquid smoke, so I used about 1 tablespoon of powdered au jus. Worked just fine for me!

Hot Artichoke and Spinach Dip II

Penne with Garlicky Broccolini

I added grape tomatoes, used steamed broccoli, added some red pepper flakes and black olives. We heart bacon, so I used about 9 slices. Added a little EVOO to make it a little less dry. I added the tomatoes to the garlic & oil before adding it to pasta and the sweetness really came out and it was great with the garlic and olives.

Garlicky Baked Butternut Squash

Really tasty! You just need to drizzle oil on the squash until it's covered. Too much will make it greasy. I also roasted some red peppers in the broiler and added close to the end of cooking. I cooked on 400 degrees and it took close to an hour, I like it soft. I used 3 BIG cloves of garlic and sprinkled parmesean at the end just before serving. Put it in the oven on warm with the lid and it kept nicely until I was done bathing the baby!! Will do again!

Easy Chicken Marsala

Really good! I used more wine than the recipe called for. I just eye-balled how much sauce I wanted and added a little chicken broth to cut the wine taste a bit. Next time I will add just a little bit of flour or cornstarch to thicken the sauce. I didn't serve it with pasta so I didn't need lots of extra sauce. Good low-fat recipe. I will definitely make again!

Egg Salad/Cucumber Sandwiches

I really liked this recipe- it may have been bland without a few alterations, but definitely a keeper. I left out the onion and just sprinkled a little onion powder on it. I used miracle whip instead of mayo (personal preference) and put seasoned salt on it and a little dill. I also added celery. Yummy!
