Fettuccini Carbonara

Very simple with great results. Had to make do w/o shallots and subst. 2% for cream. Topped w/ pesto chix breast for tasty, colorful & quick supper with a beautiful aroma (bacon, onion, garlic) which filled the house.

Best Tuna Melt (New Jersey Diner Style)

This was great! The bread had a good firmness and the vinegar in the tuna added a really nice touch. I will probably buy a very high-quality swiss next time I intend to make this, though.

Foil Potatoes

Broccoli and Stuffing Casserole

This tasted great, but when I followed it as it was written, the stuffing mix didn't get moist enough. Next time I made it, I stirred the mix in with the mushroom soup/egg mixture and I think it would be perfect. I also seasoned the soup mixture with some garlic and Italian seasoning.

Onion Chicken in Balsamic Sauce

This was very good, but the sauce never thickened for me. I followed it exactly as it was written. It still tasted excellent, it was just drowning in the liquid. I'd make it again, just use a lot less of the stock and the vinegar.

Stuffed Peppers with Turkey and Vegetables

This recipe was absolutely amazing! We had some seasoned chicken sausage that my boyfriend had bought that needed to be used up, so I substituted that for the turkey. It added a nice touch, but I had to use extra veggies, which was fine! I added some mozzarella to the tops of each pepper, as well. It added a nice touch. Excellent recipe, healthy and delicious!

Spinach Bars

I've never rated a recipe so poorly. I followed it exactly as-is, and it turned out awfully. It tastes unpleasant, the consistency seems off to me. It's not at all a "bar," you basically need to eat it with a spoon. I doubt it's undercooked, because I cooked it for an additional 20 minutes beyond what the recipe stated. It never burned, but it never got any denser, either.

Potato Pancakes

My Polish boyfriend told his mother she should come over to our place for dinner and I'd make potato pancakes. Not only had I never cooked for his mother before - I'd never even had a potato pancake before! I found this recipe and it seemed easy enough. I conned him into buying me a food processor for the potatoes. Not having the food processor would have made a very easy, simple recipe into a very long, tedious one. This turned out great! I used sweet onions, so they added a nice flavor. His mother compared them to a local Polish restaurant's pancakes. She said they were as good, if not better. It could have just been lip service, but everyone went back for seconds (and thirds!) so I'm pretty sure they were impressed! Thanks!

Clark's Quiche

I was glad I took Clark's advice and made two, and you definitely do need the deep-dish pans! I like an eggy-er quiche, but my boyfriend loved this recipe. I would probably try a variation of it next time. The spinach mixture was excellent, I would use less meat and cheese (just for lowering the fat/calories) and more eggs. I would be curious to know if anybody has tried to make a recipe like this using egg beaters, and if so, how it went.

Mexican Pizza I

This was pretty good. We couldn't get the tortillas to get as crispy and Mexican pizzas you get from a restaurant, though. It still tasted good, and everybody could put on their own exactly what they wanted.

Potato Salad with Cream

Amazing potato salad! I was very skeptical at some of the ingredients when I was making it, namely the vinegar and the egg. It all came together wonderfully though! I wasn't making it for any gathering, just for us to have around for side dishes. I probably should have known to cut it in half; it made a lot! Due to some of the ingredients in it, I was reluctant to keep it more than a few days. I will definitely make this again. It would be great at a summer potluck.

Easy, Cheesy Tortellini Bake

Easy is definitely a great word for this recipe! I was impressed at how great it tasted. I loved the alfredo/marinara combination. I did add some extra seasoning, particularly garlic. We're crazy for garlic in this house! Great recipe, I will definitely be making it again!

I don't think I've had a better bruschetta! Originally, I went searching for a bruschetta recipe because my boyfriend had never tried it before. I made this and I was so impressed with it (so was he!) that I've made it numerous times for friends and family. Everyone loves it!

Chip Chicken Lollipops

This was a fun recipe to try. I could see it being a hit at a party. I think next time, to make the chips go farther I might try doing 1/2 crunched chips with 1/2 breadcrumbs. It seemed like I needed a lot more of the crunched chips than the recipe called for in order to cover my chicken.

Chicken Cordon Bleu I

Delicious! I had a request from my boyfriend to try making Chicken Cordon Bleu, so I thought I'd attempt it. I couldn't believe how easy it was, or how great it turned out. I had some difficulty "stuffing" the chicken, I ended up sort of folding/wrapping it around the ham and cheese. It still tasted excellent!

Creamy Chicken Bake

I was running out of groceries, and I had almost everything I needed to make this, so I thought I'd give it a try. I didn't have any mushrooms or the condensed soup it called for, so I substituted an can of cream of mushroom. I also heavily seasoned the soup mixture before I poured it in the pan. It turned out great, the chicken was cooked perfectly. I've already had requests to make it again!

Chocolate Banana Cream Pie

Very simple recipe with excellent results. Not much banana flavor so I may use banana pudding and/or a dash of banana liquor next time. Added sliced strawberries on top which had the kids calling it the 'banana split pie!' First dessert gone at the birthday party this weekend. Thanks so much.
