Simple Carnitas

I fixed this for dinner last night and it was so nice.I put it in my cast iron dutch oven and it got done way sooner than I thought it would. Meat was so tender and shredded so easily I had it on the table in no time. Loved the oranges in the stock and the fact it wasn't over seasoned while cooking. Made barbequed pork sands with it last night and will use the rest 'crisped up' as you say. Thanks for a really nice recipe, Ken. Will make it again.

Cindy's Awesome Clam Chowder

This soup was so easy and fast to make and smells so darned good! My hubs is a clam chowder "snob" and thinks nothing will be as good as restraunt (sp) clam chowder....I feel so superior right now. All props to you Cindy, you made me look good !Thanks for a recipe I'll make again for sure.

Thanksgiving Leftovers Croquettes

I was really looking forward to saying "Goodbye" to my left overs from Thanksgiving and this worked out perfectly! I followed recipe as written and it came out GREAT! Nice and crunchy outside and tasty inside. Served with the rest of my pearl onions and peas and my hubby was very happy! Will do this again next turkey day. Thanks, Pam!

Deluxe Mashed Potatoes

These potatoes were great. We used Michigan white potatoes and left the skin on. We also subbed French onion dip for the sour cream and added diced onions, green peppers and real bacon bits. Finally, we baked it uncovered to get it a little crispier on the top.

Easiest Pot Roast Ever

I wasn't impressed at first because of how tough the meat was. But, we ate it anyway and forgot to turn the slow cooker off. A few hours later (total of about 10 hours, 4 on low, 6 on high), it came out excellent and I couldn't wait to have leftovers for the next day. :) I guess I'm still learning my settings on my slow cooker. But, overall, a great recipe.

Cranberry Kuchen

This is a very good coffeecake that nicely plays up the flavor of fresh cranberries. Though it's a yeast recipe, it's not in the least intimidating and is very simple to assemble. This recipe is a keeper. Give it a try!

Thai Chicken Cabbage Soup

Followed suggestions of other posters and added garlic, cinnamon, ginger, celery salt, squash, +1 cup water. Had to use up some chix thighs so they added great flavor to the stock. Terrific soup but will add even more liquid next time to thin out.

Apple Pie by Grandma Ople

Slow Cooker Pork

I didn't add as much water as the recipe called for - just a splash to coat the meat and cooked for 8 hours. I pulled the pork 5-6 hours into it. I layered tortillas, the pulled pork, spanish rice, refried beans and lots of cheese. I broiled it on low for a couple of minutes (to melt the cheese) and topped it off with lettuce, tomato, onion, olives, and diced jalepeno to make a mexican pizza. It's a new family favorite!

Slow Cooker Carnitas

Really excellent & simple using a 6.75 bone-in pork shoulder. Following some posted reviews I cut the roast into 4-5 large hunks and tripled the spice mixture except for salt & cinnamon. Was able to spoon off the excess fat and the carnitas were juicy & flavorful. So far used to make fajitas, enchiladas & tortilla soup.

Smelled great while cooking, but the meat was very difficult to shred and had no flavor. None. We followed the recipe exactly. What to do with the leftovers? I'll probably mix the meat with BBQ sauce for sandwiches.
