Easiest Pot Roast Ever

I wasn't impressed at first because of how tough the meat was. But, we ate it anyway and forgot to turn the slow cooker off. A few hours later (total of about 10 hours, 4 on low, 6 on high), it came out excellent and I couldn't wait to have leftovers for the next day. :) I guess I'm still learning my settings on my slow cooker. But, overall, a great recipe.

Homemade Fresh Pumpkin Pie

Cranberry Kuchen

This is a very good coffeecake that nicely plays up the flavor of fresh cranberries. Though it's a yeast recipe, it's not in the least intimidating and is very simple to assemble. This recipe is a keeper. Give it a try!

Thai Chicken Cabbage Soup

Followed suggestions of other posters and added garlic, cinnamon, ginger, celery salt, squash, +1 cup water. Had to use up some chix thighs so they added great flavor to the stock. Terrific soup but will add even more liquid next time to thin out.

Apple Pie by Grandma Ople

Made for my darling wife for Sweetest Day - Excellent result for my first ever apple pie. I added cinnamon & nutmeg but everyone was pleased. Even looked as good as its picture from the cover of my allrecipes cookbook. Thanks for the recipe.

Slow Cooker Pork

I didn't add as much water as the recipe called for - just a splash to coat the meat and cooked for 8 hours. I pulled the pork 5-6 hours into it. I layered tortillas, the pulled pork, spanish rice, refried beans and lots of cheese. I broiled it on low for a couple of minutes (to melt the cheese) and topped it off with lettuce, tomato, onion, olives, and diced jalepeno to make a mexican pizza. It's a new family favorite!

Slow Cooker Carnitas

Really excellent & simple using a 6.75 bone-in pork shoulder. Following some posted reviews I cut the roast into 4-5 large hunks and tripled the spice mixture except for salt & cinnamon. Was able to spoon off the excess fat and the carnitas were juicy & flavorful. So far used to make fajitas, enchiladas & tortilla soup.

Smelled great while cooking, but the meat was very difficult to shred and had no flavor. None. We followed the recipe exactly. What to do with the leftovers? I'll probably mix the meat with BBQ sauce for sandwiches.

The wine and lemon juice made the very thin 'sauce' too acidic for us (If I made this again I wouldn't include the lemon juice). We added sauteed mushrooms.

Dang it, that's good! Sliced bananas as instructed, but folding them into the mixture squished them a bit. Had a slice straight out of the pan with butter - yum, but this morning I had a toasted slice with honey nut cream cheese... Yummm!

Mama's Best Broiled Tomato Sandwich

Yum, yum, YUM! I didn't marinate the tomato slices - it seemed like such a shame to hide their flavor under a vinegar and oil blanket. The mayo is to die for - you still taste the tomato, but it is... just yum. Hubby loved too.

Risotto with Asparagus

This was my first attempt at making risotto at home, and it turned out very nicely (if I may say so myself). Just before adding the first cup of broth I set the timer for 20 minutes - this kept me on track and made for perfectly cooked rice. I'll try using mushrooms next time.
