Fast and Delicious Black Bean Soup

I really enjoyed this recipe; it’s fast and fairly nutritious. I used another member’s advice and used my emersion blender so I could get just the right texture between the beans and the veggies. I mostly made it to take to work by my boyfriend couldn’t resist trying it and he loves it! The only reason why I rated it a four versus a five is there was just too much ham for me. I did use a red bell pepper instead of green. Overall a great easy recipe!! Leftovers are great, one pot can make a several lunches!

Breakfast Pies

Loved this recipe... easy & delicious! I did use my own biscuit recipe instead of the canned biscuits (we don't like the canned) and added a few shakes of Red Hot Sauce and garlic pepper to the egg mixture... and they were fabulous. Very similar to the breakfast quiche on South Beach but sooo much better :)

Garden Fresh Tomato Soup

Most tomato soup recipes I have tried are acidic tasting but not this one, it's awesome! When I had fresh tomatoes out of my garden I made several batches and froze them.

Whole Grain Waffles

These were the best whole grain waffles I have ever made! I made the recipe exactly, my 2 year old said "these are yummy mama" The recipe made 9 servings and they are so packed full of healthy whole grains you don't need more than 1 serving to fill you up. Here's what you can do with extras, cook them a little lighter than usual, than cool on a cooking rack (very important so they don't get soggy), wrap each waffle in wax or parchment paper and freeze in freezer bags. When you want to eat them take them out of freezer and let them sit on the counter for a few minutes, then pop them into the toaster, because you made them lighter than usual the toaster will toast them up the rest of the way.

Goulash Supreme

Very good. After reading some reviews about pasta troubles I took everyone's advice and cooked the pasta separately and added it at the end. I also added a couple splashes of Worchestershire and doubled the garlic. Hubby and I loved it but the kids wouldn't touch it.

Apple Pie I

I love this pie recipe. I make sure when making it, I use a lard pie crust recipe. There is no substitute! Always remember to brush the top crust with egg to give it that golden brown look, and sprinkle a little turbinado sugar on top right as it comes out of the oven.

Aunt Teen's Creamy Chocolate Fudge

Awesome! I followed the recipe exactly except I skipped the nuts and after it was in the 8 x 8 pan I crumbled 4 large Reese peanut butter cups and sprinkled them on top! It is incredible, I will be making this again.

Cheeseburger Soup I

This soup was pretty good but my kids (2 and 4) didn't really love it and when I asked my husband if this was a repeater recipe he said "I don't think so". Not sure if I will make it again for all the work it wasn't that great.

Oregano-Lemon Chicken

This was very tasty and yet easy if you use chicken breast. I actually used frozen breasts and mixed all the ingredients together (used butter instead of olive oil b/c of what I had on hand) and poured over the frozen chicken and baked in a glass dish in the oven. Be sure to turn the breast over a couple times and/or baste them to get the flavor throughout.

Garlic Cheese Quick Bread

I doubled the garlic and used 1.5 cups of cheese and could barely taste either. It was dry and crumbly - ok but not great. If you used lots and lots more garlic and lots of cheese, it might make it better. Disappointing because it smelled and looked soooo good coming out of the oven!

Chicken Chile Spaghetti

This was a good alternative to a typical casserole. I used fresh mushrooms and omitted the pepper due to taste. I also used cooked chicken breast instead of a whole chicken. Hubby requested this dish again a few weeks later.

Brined and Roasted Turkey Breast

I will never make a turkey breast (or whole turkey!) without brining it first. Seriously, this is the best way to make turkey incredibly juicy and delicious, and you can definitely vary the brine according to your taste or what you have on hand. I'm pro-brine!

Cheese Ramkin

just made this today because I had to use up some puff pastry and cheddar cheese. seems like there was too much milk and you definitely need to cook much longer because mine turned out gummy on the bottom and mushy in the middle after cooking for about 16 minutes! I added some scallions for flavor...I will make these again but will cook much longer and use less milk...perhaps one more egg?

Zucchini Cornbread Casserole

This was quite good although I would say using the Jiffy cornbread mix it was a little sweet which made it a bit of an odd mix of flavors. It was a good way to use zucchini so that the kids would eat it! I might try a diff. bread mix next time and like other reviews add some seasoning.

Slow Cooker Lemon Garlic Chicken II

This was pretty good for a quick throw together recipe. I only had frozen chicken so I put that in the crock and then boiled the 1 cup water with the other ingredients and poured over the top. After 4 hours the chicken was falling apart. To give it color and flavor after adding the parsley I pan fried in a little olive oil. My Italian friend makes lemon chicken with basil and fresh mint so I think I will try that next time instead of oregano.
