Blueberry Cream Muffins

delicious. this is a rather dense muffin. i added a few more blueberries and sprinkled the tops with cinnamon and sugar before baking. i greased the muffin tins, but since this is such a dense muffin, i recommend using paper liners as it was hard to get the muffin out intact.

Microwave Corn on the Cob

I have used the microwave to cook corn for years when there is no time to grill it. Just soak the corn in the husks, you don't need the paper towel and you don't have to husk it to remove the silk first. Just cook it, the silk falls right off when the corn is cooked. How long depends upon the power of your microwave. Start with 2 minuets, turn over and do another 2 minuets per ear if cooking 2 to 10 ears.

Slow Cooker Tapioca Pudding

make sure to use small pearl tapioca. all i could find was large pearl, the consistency was too thick. great taste and easy though.

Spicy Chipotle Turkey Burgers

I've never had a turkey burger before, but this one seemed pretty good. It was pretty moist and flavorful, but the cilantro flavor was a bit too much. It mellowed out some (or maybe I got one with less cilantro?) as leftovers the next day and wasn't as overpowering, but I still would probably omit it if I make these again.

Chocolate Peanut Butter Cookies

These cookies are fantastic. I followed the recipe almost exactly, only I used regular creamy peanut butter instead of chunky (just as a preference). I was a little nervous before baking them because the dough was so oily and gooey, but after eight minutes they were perfectly baked delicious cookies!

Fettuccini Carbonara

Too much grease and oil, so with some modifications this was a 5 star recipe. I cut the bacon back by 1/3 and fried it first (set it aside.) Then I drained off more than half the grease and sauteed the onion in it. (Didn't have a shallot so skipped it.) When the onions were almost done added 3 crushed cloves of garlic and a couple tablespoons of chicken broth. Used 3 eggs instead of 4 egg yolks and whipped them into 1 and 1/2 cups of heavy cream. Then when pasta was done I tossed it with the onion/garlic mixture and added the cream/egg mixture to it, cooking and tossing until it started thickening. Then I added 1 cup of parmesan and 1/3 cup mozzarella and tossed. Then seasoned it with a little nutmeg, black and cayenne pepper, and salt.

Easy Granola Bars

These are terrific! Like other reviewers, I put it in a jrp, but instead of greasing it, I lined it with parchment paper so it wouldn't stick. Worked great! Can't have nuts due to allergy so increased the coconut 1/2c and used 1 c plump raisins. Otherwise, followed recipe to a 'T'. Daughter, who usually can't stand raisins, or anything healthy for that matter, loves these. Will definitely make these easy bars often, and may change up the ingredients here and there! Thanks for the post!
