Caribbean-Spiced Pork Side Ribs

Reviewed: Nov. 27, 2009
I made these for our traditionally untradtional thanksgiving this year and good rave reviews. I made three racks for 7 people and only had enough left over for two plates to send home. The flavor was fantastic, they weren't dry, the lime flavor snuck in but didn't overwhelm, the ginger stood out and the rest blended very nicely. Everyone was pleasently full. The meal was ended with jamaican plantain tarts, also from this site and ......... My best friend made the carribean holiday shrimp and the hard do bread for our appetizer and bread while my adopted little sister made the jamaican rice (also from this site) as a side dish as well. The meal was fantastic and every bit of it was from this site! THANKS AGAIN ALLRECIPES.COM!

i agree with previous reviewers -- it is more of a cake in a pie plate. nonetheless, it looks pretty, it is easy to make and it tastes delicious.

Arugula Salad with Cannellini Beans

Reviewed: Nov. 23, 2009
This is delicious. I had some beautiful arugula and started searching for recipes. Thank goodness I found this. Hubby is a vegetarian, so I sometimes struggle for new recipes. I made this one exactly as printed, but added a little onion with the garlic. The wine, garlic and tomatoes are a lovely counterpoint to the spicy arugula. I think the cheese is a must. =) Thanks, Kim!

Hash Brown Casserole II

Reviewed: Nov. 23, 2009
We make this every holiday. A friend of my younger brother had a small wedding where their parents prepared most of the food. After spending holidays with us several times they requested that I make three pans of this for the wedding reception. (Later I found out they wanted two pans for the reception and one to take home to eat themselves. LOL!) I just came to the site hoping to find this already typed out. My daughter wants to make it and wanted me to email her the recipe. (Coming here is easier than typing it out!) This will always be a family fave for us. Sometimes we change it up by using different soups and different cheeses (once we added diced ham and swiss w/celery soup... it was great!), but we always come back to this version.

I loved this recipe, although I too cut the recipe in 1/2, and baked at 325 for 60 minutes. My kids and husband love this and I have made it numerous times over the last few weeks.

Light Oat Bread

Reviewed: Nov. 16, 2009
I'm not sure if I did something wrong... I followed the recipe except used butter instead of margarine and substituted half white whole wheat for half of the bread flour... I did add a tablespoon of vital wheat gluten to try to make up the difference. Anyway, I got a mess. It was raw in the middle and "fell" in the middle... Maybe my bread machine is not very good, but I've never had this particular problem before. I did notice that the dough looked "wet" to me compared to the recipes in my bread machine book. I probably should've added a bit more flour during kneading. But anyway, other people subbed for whole wheat and apparently didn't have a problem so.... I'm not sure what the problem was, but can't rate it better than a 3.

delicious! I never thought of mixing hummus with tuna...I had just made some homemade hummus and had the fresh herbs on hand - so tasty and healthy! I did skip the chile pepper and added a little celery for crunch.

Burrito Pie

i used 1 pound of ground turkey in place of the beef and omitted the olives and chili peppers. i took the suggestion of happywife05 and used 2 tortillas per layer instead of one. end result was delicious with enough left over to freeze. will definitely make again and maybe add some corn to the mixture.

Chunky Applesauce

Reviewed: Nov. 2, 2009
This turned out well. I didn't have to add any water as some have suggested; the apples gave off enough water during cooking. I found it to be a little too sweet, but then again, maybe my apples weren't tart enough. I also didn't mash the apples. It was saucy enough without that, but I used softer apples too.

Eggplant Parmesan II

Reviewed: Nov. 2, 2009
This was fantastic! My family and friends loved it and have passed the recipe on. My only other comments: 1.) I only needed 2 eggplant (mine were large and sliced very thin) and were still enough to almost overflow my 9x13 dish. 2.) 2 eggs is misleading - we used 5 eggs. 3.) We only used approx. 3 cups of bread crumbs. I will make this again and again. Fantastic!

Honey Of An Oatmeal Bread

Reviewed: Nov. 1, 2009
This was a wonderful bread. I used apple sauce instead of oil, and I split the flour between bread flour and white whole wheat flour. I also added a couple teaspoons of gluten, and had a bit of a free hand with the honey. This was a very good, soft bread with a nice crust.

Oatmeal and Applesauce Pancakes

Reviewed: Oct. 31, 2009
These were really good. Everyone loved them. I did add about a 1/2 cup extra oatmeal and extra baking soda and powder. I also used whole wheat flour instead of all-purpose. I let the batter sit in the fridge for about half an hour and then thinned out the batter with a bit more milk, but it was still thick. This only about 9 pancakes, but they were so filling that you only need to eat two.

Ay caramba! Me gusta mucho! Left out the beans, pureed some of the hominy and threw in some tortilla chips which fall apart to give it a thicker consistency. Seasoning is right on. I'm sure I will make this often.
