Quick Chili II

SO easy to put together! I added a can of fire roasted diced tomatoes to mine and left out the chilies (bf isn't big on chilies). It would be a great chili to go over fries and/or hot dogs too! I'm going to try that next :)

Baked Dijon Chicken

This has become a weeknight staple for us; quick, easy, and yummy! My personal preference is to use panko breadcrumbs but, still good if using regular, plain breadcrumbs.

Japanese Chicken Wings

Loved the sticky sweetness! Since me and my friend made these for a bridal shower; the mass quantity we had to make took too long to fry with just butter so we added canola oil to speed up the process. Still turned out very yummy though; they were a big hit at the shower.

Apple Stuffed Chicken Breast

Yum! I did add some chopped pecans and some chicken seasoning for a little something extra. I also used chicken broth instead of water. Wasn't sure if the BF would like it but, he did. I will probably make again; it's a great fall meal when apples are in season! :)

Sugar Cookies X

WOW! that's all i have to say. These are so delicious and so easy. The cookies are also not very time consuming which is a BIG +!! I substituted the 1c veg oil for 1c EVOO (i do that whenever a recipe calls for veg oil)and instead of 1t vanilla I did 1/2t almond and 1/2t vanilla. Straight out of the oven they were a tiny bit greasy but, I placed on paper towels to cool after the first batch and that seemed to cut down on the greasiness; still yummy though! I absolutely love how they melt in your mouth! Will definitely make again!!

I reduced sugar to 3/4 c, increased apples to 6 c. I like it better COLD. I won't frost it next time. Great w/ cup of afternoon coffee or tea. It's a keeper!

Colorful Popcorn Balls

Just a tidbit for others, I didn't think about till after I did it. Take out the unpopped seeds before pouring on marshmallow topping! Another tip: Just keep your hands wet with a little water it's easier than wearing gloves or spraying your hands with butter. They turned out quite sticky too. Do a spritz of spray butter on the celo-wrap before wrapping, or I would recommend refrigeration before eating. They were GREAT tasting!

Mom's Baked Macaroni and Cheese

I used this recipe and baked the macaroni and cheese in cupcake liners for my son's birthday party. HUGE HIT. The kids could help themselves and throw away the wrap when they were done. I mixed the shredded cheese with the noodles and soup to make it extra cheesy, I used 1 tlbsp salt when stirring it up. I put sprinkle of cheese and pinch of bread crumbs on top of each "cupcake". They were soooo cheesey and were gone instantly! Thanks for the great receipe. It's definately a keeper in my house! The boxed stuff can stay in the cupboard from now on.

Holiday Chicken Salad

I'm pregnant and have been craving a good chicken salad for the past few days. As soon as I saw this recipe I knew I had to make it. Luckily, it turned out delicious!!! I cubed 3 whole boneless skiless chicken breasts and cooked them in a little olive oil. I seasoned them in salt, pepper, and garlic powder. I did not add green peppers but did add grapes and an apple. I didn't really measure anything out except for the mayo (Miracle Whip in my case) and just added the ingrediants until it looked good. I also did not add anymore salt or pepper (since I had seasoned the chicken breasts with it) and only added a dash of paprika. I also omitted the seasoning salt as it didn't really sound appetizing. I let it sit for about an hour in the fridge and then ate it on a crossiant with some lettuce. This will now be the ONLY chicken salad I make...ever!!! It was to die for!!!

Yellow Cake Made from Scratch

My kids and I had some fun with this. We added food color droplets into the batter and swirled in color. Then threw in a few chocolate chips before baking (note: choco chips sank to the bottom of cake). I followed recipe exactly using butter instead of shortening, and included water cookie sheet in the oven for extra moistness. I made a 9x13 pan and baked for the full 45 minutes. It browned fully on top but was NOT hard or crusty. It was a great tasting cake. No frosting needed!

Dutch Potatoes

This was a great alternative to the regular mashed potatoes. I would recommend one change, of boiling the carrots and potatoes separately. My carrots were under cooked so they were chunky. Great dish for kids too!

Chocolate Chip Cookies Without Chocolate Chips

These cookies turned out WONDERFUL!! Honey is a nice touch. I've been looking for a great recipe for years making homemade cookies without chocolate chips, I would always have the problem with them poofing up too high and getting cakey. These turned out great. They settled about 1/4 inch thick and browned nicely around the edges. I only kept them in the oven for 6 1/2 mintues and let them finish baking on the sheet outside the over for 3 more minutes before I removed them to a cooling rack. The kids gobbled them all up immediately!

Banana Chip Muffins I

I used skim milk and 1/2 amount of chocolate chips to save on calories. The bottoms were lightly browned I used silicone mini muffin pan. It only took 12 minutes to bake. The kids loved em!
