Gourmet Chicken Salad

Reviewed: Jan. 4, 2009
I used three chicken breasts that I broiled instead of canned chicken. I also decided on the black grapes (they looked red but were labeled as black) because of their flavor. I opted to use about 1/3 cup of mayo instead of the cucumber dressing simply because I had it on hand. Served on croissants, it was exactly what I anticipated, a light and fruity chicken salad. Yum. Thanks for a simple and delicious recipe. It's now one of my favorites and will be keeper.

American Lasagna

Reviewed: Dec. 24, 2008
I have been using this recipe since 2004. It is the best. Changes: I omit the meat and instead use chopped mushrooms and zucchini in the sauce. I use 9 noodles not 12. I have substituted both cottage cheese and tofu for the ricotta. They both came out amazing. I add more mozzarella to the top and sprinkle grated parm to finish it off. No matter what you do to this recipe it will come out delicious. Kudos!!!

Cheesecake Brownies

Reviewed: Dec. 20, 2008
I had my own recipe for this that I made more than 15 years ago but since I didn't want to look for it I opted to use my favorite resource, allrecipes. Was pleased to find a few options to choose from, particularly one that starts with packaged brownie mix -still my favorite. This is still in the oven baking so I will hold off on the rating/raves until I taste the final product.

Pecan Chicken Breasts Stuffed with Cream Cheese and Broccoli

Reviewed: Dec. 10, 2008
WOW! This was awesome! Unfortunately, I feel like I only ate half of the recipe as my boyfriend has simple tastes and doesn't like peppers or pecans (so picky!). Even so, I just added some more bread crumbs and seasoned them a little. This was definitely worth having. I was a little skeptical when I saw what kind of cheeses were used (I was originally looking for a Chicken and Broccoli with Cheddar recipe) but it was well worth the time and effort! Thanks so much for posting this! I'm going to prepare a few of them as an appetizer at Christmas dinner this year. Thanks so much! ^_^

Chicken Marsala with Portobello Mushrooms

Reviewed: Dec. 10, 2008
I thought this recipe was awesome! I'm new to cooking with red and white wines so this was a nice springboard for me. Sadly, the man I cook for isn't into mushrooms (he has simple taste buds) so I ended up swapping them out for broccoli (his favorite) and it still tasted great. I did take a few suggestions from other people who suggested adding seasonings and more Marsala wine. I sprinkled some Oregano and added a dash of Basil to the sauce after adding the broccoli. I served it on top of thin spaghetti noodles which were soaked and boiled in water with basil, oregano, pepper, a little salt, onion powder, olive oil, small slice of butter, and some Thyme. I think the seasoned noodles complimented the dish well. Like most of my sauces, I still had difficulty making it thicken. But that's me, not the recipe. ^_^ Thanks for posting this! I really appreciate it! My boyfriend loved it and I can't wait to share it with his family. Thanks again!

Fabulous cookies! Sweet, tender, moist, addictive! The only change I made was to add a little lemon to the icing. However, these cookies are good enough to stand alone!

No-Fuss Cinnamon Cheesecake

This was a big hit at thanksgiving desert time, I had requests for seconds! it's very rich and delicious, the cinnamon topping was a perfect addition. I thought the crust was going to be weird but was pleasantly surprised. I even made with reduced fat cream cheese and came out great!

Cheesy Potatoes I

Reviewed: Nov. 18, 2008
We all love this recipe. I have made it twice now and it was awesome. I mix everthing together in the beginning and stir well then put in oven to save on prep time. Great way to get kids to eat potatoes. I used shredded cheddar one time anm Colby Jack another. Does seperate a little but still just as good.

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

Reviewed: Nov. 16, 2008
My husband requests this so often I had to make it a special day meal! It's his favorite. I made too much of the spinach mixture, so afterward I added more blue cheese to it, baked it for about 20 minutes and spread it on garlic bread chips... it was delish!!!

It's not like Kraft but my husband loved it... and he is VERY picky. I just sprinkled the bread crumbs on top and then drizzled the melted butter over top. I also added Broccoli and used shredded parmesan instead of grated. Very delicious!

Loved it! lots of good advice on here, though I think the original is pretty right on, lots of ways to cater to your own tastes. The best thing about these granola bars is that you can sneak healthy things in without your kids/spouse knowing. :)
