Zucchini Herb Casserole

This was a huge hit. Made it according to the directions but used canned tomatoes vs. fresh because we are not big tomato people and canned was all I had in the house. My husband and friend were hesitant at first but both became quick fans and had a second helping each. This is now a regular in my meal plans!

Creme Brulee French Toast

Very yummy and went over well. There is some planning that needs to go into making this as it needs to sit over night but turned out very good. I made it with some homemade french bread that I cut up into about 1" slices then cut each slice into 4 pieces to make it more of a finger food and allowing others to take as little or as much as they wanted. Would totally make it again and wasn't hard at all.

Salmon Salad

This was a basic start to something yummy. I went with the yoghurt, mayo, salt and pepper but I nixed the celery and replaced it with cucumber -it just seemed to sound a little lighter and more fresh. I also added some red cayenne pepper to taste, served on a tortilla with a slice of ripe garden tomatoe and a squeeze of ripe lime from our tree -oh so yummy. A faint taste of pico de gallo in our salmon salad made it perfect on the tortilla. I still think it was missing something. Maybe I'll add mango next time. Thanks Jessica for the start to a new favorite.

Quick Sausage Party Melts

Yummy, easy and there was none left over. I didn't do the tomatoes on top as I didnt have time to be very fancy but they were all eaten just the same. Think jalapeno rings would be a nice touch too for spicy lovers. Oh I used Spicy sausage vs regular to kick it up a bit. Will make again!

Grandmother's Old Fashioned Butter Roll

Good basic start, which means that one can "customize". Use brown sugar and evaporated milk; instead of milk and white sugar this makes a caramel sauce. Umm! Use a raisins, pecans or granola with a sprinkle of cinnamon on the flat dough before you roll it up. In the milk sauce use a teaspoon of vanilla.... Lord have mercy! All of which I have tried with great results.

Maryann's Upside Down Rhubarb Cake

I am rating this cake 4 due because it is too sweet. This coming from a sweet tooth. The sugar ratio (to me) over-powers the rhubarb. When it is a Rhubarb Cake...rhubarb should be the star of the cake. The flavor of it should be forefront. Not sugar. However, it is very, very easy to make and I like the fact that it is not too custardy. The contrast between textures are spot on to me. Might be due to the fact that I left in 10 minutes longer. I definitely agree-- the recipe is a keeper but I will (like the other suggestions) increase the rhubarb to 4 cups and decrease sugar to 3/4-1 cup. The sugar already in the cake mix compensates enough but even with original recipe measurements a delicious cake. The whipping cream gives it that homey goodness. Note: I do agree that the box cake mix flavor comes thru but recipes like this--are for quick, tasty, easy desserts. This recipe perfectly fits tha' bill. If were not for the over sweetness, I would give it 5 for a GOOD BOXED CAKE recipe and it is highly adaptable to other substitutions as well as additions. Great job.

Hearty Ham Casserole

I started this recipe with my leftover Easter ham and store bought prepared (cubed -for breakfast) O'Brien potatoes. I used sharp cheddar cheese and added about a 1/2 cup to the sauce while heating so the cheese was melted and evenly distributed. I forgot to add the parsley but I can't imagine it made that big of a difference. Topped the dish with maybe a 1/4 cup of shredded cheddar and voila, a quick and easy casserole that came together in minutes. Yum. I opted to stick with the plain canned corn instead of the Mexican blend others suggested because the potato mix already contained chopped bell peppers and a little onion. This will be added to my recipe box. It's a simple dish that's easy to prepare and satisfied the entire family.

Chicken Piccata II

I picked up some chicken breasts for $.77 lb and figured I would take advantage of a full lemon tree in the yard. Good choice too. This was very easy to whip up and delicious served with vermicelli. Next time I will either pound the chicken or else slice into portions that are about two bites. After cooking this recipe I would probably opt to use chicken broth instead of bouillon. I omitted the capers simply because I'm just not partial to their flavor. I did triple the broth and added sliced garlic (next time just one clove, crushed) and it was great with the pasta. I will be making this dish again as well as sharing the recipe some friend. Yum.

Slow Cooker Italian Beef for Sandwiches

Never having been in Chicago, and having never had an Italian Beef Sandwich, I have nothing to compare this to, but this recipe definitely makes an amazingly tasty sandwich! Following some suggestions, I used two packages of Italian Dressing mix, added some pepperoncinis, and used a chuck roast for easier shredding. My kids and I ate it on a hoagie roll with some of the "juice" to dip, but my husband broiled it with some sliced provolone, and claimed it awesome that way as well. Thanks for the recipe.

Lemon Mushroom Herb Chicken

This is such a easy and yummy dinner. I tried it out on my husband and a friend of ours and it was a big hit. I then made it again and it was a big hit. Reheats great for lunches too. However I think the next time i make it I will cut down the amount of the herbs and add some mushrooms.

World's Best Lasagna

I made this for the in-laws and kids and it was a huge success. My sister-in-law even enjoyed a few nibbles following dessert. Now I don't know how much better it can be than that. ;) I did not precook the lasagna noodles. I substituted 1 can of cubed tomatoes in place of one of the cans of sauce as someone else recommended. I also added an additional can of cubed tomatoes just to increase the amount tomatoes for my own taste. I cooked the sauce as instructed and took it from there. I did use more mozzarella than suggested and less ricotta only because my options were 15 oz or 32 oz size. I baked it covered the entire time and then an additional 15 minutes to brown the cheese on top. It made a 9 x 13 inch pan, three layers of noodles and plenty of sauce on top of each layer. Delicious, easy and enjoyed by everyone.

Drop Dead Delicious Tuna Salad

MY HUSBAND AND I FOUND THIS RECIPE TO BE VERY GOOD. THE ONLY THING IS THAT I ADDED ONIONS AND EGGS.I ALSO MADE A MISTAKE AND GOT 2 CANS OF TUNA WITH VEGGIE OIL DON`T DO THAT IT MAKES IT LOOSE. I WOULD LIKE TO THANK YOU FOR SUCH A GOOD RECIPE.

Baked French Toast

I made this recipe but I cut it in half for the three of us. This is very tasty but as many others have said it's also a really moist Baked French Toast. I thought it could use revising so I will start by reducing the milks by a 1/4 cup each. I already extended the baking time by a minimum of ten minutes. Other modifications I made: 1 tsp cinnamon and 1 tsp vanilla added to the syrup mixture. This is so tasty even if it was on the moist side. I will be making this dish again.

Gourmet Chicken Salad

I used three chicken breasts that I broiled instead of canned chicken. I also decided on the black grapes (they looked red but were labeled as black) because of their flavor. I opted to use about 1/3 cup of mayo instead of the cucumber dressing simply because I had it on hand. Served on croissants, it was exactly what I anticipated, a light and fruity chicken salad. Yum. Thanks for a simple and delicious recipe. It's now one of my favorites and will be keeper.
