Downeast Maine Pumpkin Bread

I'm an absolute beginner to both cooking and baking and not only was this recipe easy, it tasted great and was a hit with my family on Thanksgiving. Very moist and tastes even better with some melted butter on top. Will bake again!

Mimi's Zucchini Pie

This was delicious. Like another reader, I put a center layer of tomatoes and Parmesan and then more tomatoes and Parmesan on top. This is good for brunch, lunch and dinner. Just use a little imagination on the "go withs". I see lots of possibilities in substitutions using the basics.

Roasted Brussels Sprouts

Oh yeah - this is the best... even for B.S. haters. Instead of putting them in an oven, I just sauté them until the halved side is golden brown. Flip them and brown the just a little on the other side. Take them off the burner, add salt and pepper... DONE! Try using a little lemon juice or balsamic vinegar... wowie!!

Mashed Potatoes with Fried Mushroom, Bacon, and Onion

This was fantastic. But like many others, I added some milk since the mixture was too stiff without it. I also added course ground garlic salt for a little added zip.

Broiled Tilapia Parmesan

Wonderful. I used the suggestion about the Old Bay seasoning and the breadcrumbs and the paprika,garlic powder, etc. I didn't use the lemon juice and it was just perfect.

Crustless Cranberry Pie

Date Nut Bars

Very good. The chocolate on the top seemed a little too hard. It crumbled when I cut it and sort of broke instead of letting me cut it into squares, but it tasted fantastic.

Famous Butter Chicken

My family loves this. I don't use butter, but spray some olive oil in the bottom of a 9x13 and then lightly spray the top of the chicken. It is wonderfully moist and tastes fantastic.

Eggplant Parmesan II

Fantastic. Really good. Time consuming but so tasty. I cut and salted the eggplant the night before and layered it between paper towels. I put it on a plate with a heavy bowl on the top and it really took out the bitterness. Fantastic meatless main meal.

Pumpkin Turkey Chili

Wonderful. I used 3 T of chili powder as some suggested, and two cans of rinsed black beans. I also added a T of cumin and 3 cans of diced tomatoes with green chilies instead of one. Excellent.
