Downeast Maine Pumpkin Bread

I'm an absolute beginner to both cooking and baking and not only was this recipe easy, it tasted great and was a hit with my family on Thanksgiving. Very moist and tastes even better with some melted butter on top. Will bake again!

Mimi's Zucchini Pie

This was delicious. Like another reader, I put a center layer of tomatoes and Parmesan and then more tomatoes and Parmesan on top. This is good for brunch, lunch and dinner. Just use a little imagination on the "go withs". I see lots of possibilities in substitutions using the basics.

Roasted Brussels Sprouts

Oh yeah - this is the best... even for B.S. haters. Instead of putting them in an oven, I just sauté them until the halved side is golden brown. Flip them and brown the just a little on the other side. Take them off the burner, add salt and pepper... DONE! Try using a little lemon juice or balsamic vinegar... wowie!!
