Pork and Potatoes

Tasty! Since I only made this with 4 pork loin chops I chose to only use one can of soup with about 1/4 cup of water. Based on another reviewer I used celery soup vs chicken or mushroom. I did however use fresh mushrooms and half of a small yellow onion. I put the sliced potatoes (not cubed) in the bottom of the roasting pan and put the chops on top after I had seared them in a little EVOO. Then I poured the skillet remains over the top of the entire dish. I added various seasonings like onion and garlic powder, cracked pepper and salt. I also sprinkled on some Italian seasoning just over the meat. I covered it in foil for the first 40 minutes. Baked for another 15 without the foil. The potatoes were perfect and very flavorful. The meat was slightly over cooked, but that was my fault since the slices were thin. I should have kept a better eye on them. I think with the suggestions to add extra seasonings and veggies to the dish, plus using celery soup, made it a success flavor wise. I will make it again.

No Bake Chocolate Oatmeal Cookies

Ground Turkey Noodle Bake

We loved this, and like some others have said, it is a great alternative to lasagna especially since it only takes 15-20 minutes to bake. One suggestion is to use a sturdier noodle like a ziti. My husband thought the egg noodles were too flimsy for the heavier meat and cheese mixture. Also, I didn't have any cream cheese on hand but did have a soft white, veggie cheese spread. It worked perfectly and added a lot of flavor to the noodles.

Cocktail Meatballs IV

We make these for our holiday party and people go nuts. They can't believe they are made with grape jelly. Be prepared to make 5x what you expect to feed the crowd!

Beef Stroganoff III

Makhani Chicken (Indian Butter Chicken)

Very good! This recipe makes a ton of sauce so I always make more chicken. A little time consuming but worth the effort- I let the chicken marinate in step two ingredients overnight.

Butterscotch Brownies I

I have no idea what happened but the outside looked awesome when they came out of the oven, but the inside was complete sugary mush. The whole thing had to be thrown out. I followed all sorts of suggestions to thicken the mixture, but apparently it didn't work for me.

Pineapple Cobbler

This took forever to bake, a lot more than the 30 minutes it says. WAY too much butter!! I used between half a stick and 3/4 of a stick and it was too much, and I love my butter. The only thing I did different was add a light strudel topping and I used fresh pinapple cut into chunks. I wouldn't make this exact recipe again, but I would tweak it and make it again because the the flavor was delicious.

Spinach Roll-Ups

I just made this recipe for the second time. I halved the recipe so I used 1 bag of spinach, a 3/4 bar of lite cream cheese, 1/2 cup of lite mayo, one spoon full of lite sour cream, and one small white onion. I also separated the batches and added red cabbage to one and bacon bits to the other. I think it is nice to have a vegetarian option. The cabbage added a lot of color and has bite to it. Last time I added grated carrot but it was a bit too bland. I was able to get 3 good size tortilla rolls out of this amount.

Slow Cooker Chicken Dinner

I made this recipe much like some of the other reviewers who recommended adding more seasoning. I used a little chopped onion, crushed garlic, and various spices including a couple bay leaves. I think the lemon pepper was a nice touch. I added about 1/8 cup of skim milk over the top once all the soup was spread around. I hoped this would make the sauce less dense. I put my slow cooker on 8 hours and it was done within 7. It was very flavorful and not too thick. The potatoes and carrots were done perfectly and the chicken was moist. My husband loved it. He suggested adding some corn to the mix for more color and veggies. I will make this again. Thanks!

Delicious Ham and Potato Soup

Not that this recipe needs another rave review but I had to do it. I put in about twice the amount of potato and ham called for, and like the author said, it worked out great. The only bad thing about this soup is I couldn't get anyone in my family to eat anything else until it was gone (including myself).

Peanut Butter Quesadillas

This was great, my 5 year old says "it's delicious!" We both loved this. I used corn tortillas for mine, flour for hers. I added a small piece of chocolate to each and mixed honey and strawberry jam for the dip. These were great, we'll definitely be making them again! Thanks!

I tried these cookies with another Swedish tradition - Lingonberry jam. They were pretty good, but unfortunately lingonberry jam baked isn't all that great, too tart. The jam is great on toast or pancakes though. I also tried a few of these cookies without the jam and they were delicious, light, and were gone in 30 minutes. I will definitely make these again, probably with raspberry or orange marmalade.

Green Beans With Walnuts

Wonderful! I made the batch for 12. I was shy about 1/4 lb of fresh beans, but luckily I had one small bag of organic frozen to mix in. It didn't make a bit of difference. I left some of the fresh beans a bit long since it looks so nice. I prepped the beans the day before, then boiled and ran them under cold water before I left for the Thanksgiving dinner. I also made up the oil and garlic mixer and put that in a container to take with us along with the chopped walnuts. Once the turkey was coming out of the oven I sauted the beans in the oil, garlic, salt, pepper, onion powder and celery salt, then added the walnuts. The beans heated just enough to keep their crispness. They were delicious and colorful. I had many raves for this recipe. Thanks. I will continue to make this one. Loved the walnuts.

Downeast Maine Pumpkin Bread
