Baked Kale Chips

If my husband asks me to make it again,you know it is good. He vowed as an adult no one would make him eat veggies again. It is very hard to keep though.

Caldo Verde (Portuguese Green Soup)

I took a little bit of advice from a few of the reviews. I used sauted onions garlic and yukon gold potatoes boiled in 32 oz. chicken broth and 32oz of water. I wilted the kale in broth skimmed off the potatoes and browned slices of Alfrescos sun dried tomato chicken sauage. I pureed the potatoes, kale and broth in a blender and added the sausage. My texture challenged hubby loved it.

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Personally I did like this. It could have just been personal palate and taste, but for me the spinach and garbanzos just didn't work well together. I did end up throwing it into a food processor and adding tahini to make it more like a hummus type dish.

Stuffed Chicken Valentino

Fried Zucchini

I used a mixture of half cornmeal and half flour. It still gave the crispiness of the cornmeal but without it being gritty. I would make this again.

Bountiful Garden Zucchini Enchiladas

Excellent. I never thought to zucchini in an enchilada but it was a great idea. And the cheese sauce portion of this recipe would be great on it's own, but add it to the enchiladas and it is dynamite. I also added some leftover shredded chicken to mine just so I could use it up. I will be making these again.

Italian Butter

I didn't use the rosemary but I used everything else. I loved the red pepper and thought it was very key to the overall taste. My best advice though is to use REGULAR olive oil and not extra virgin. The taste is too strong.

Creamy Rice Pudding
