Broccoli and Tortellini Salad

This recipe is very yummy and a balanced meal if you use torellini filled with cheese. I did not have any red onions, and used rice wine vinegar for a touch of sweet but NO SUGAR. I also used organic canadian bacon. Next time I won't use quite so many raisins. I'd give this 4 1/2 but only because it has too much sugar.

Suki's Spinach and Feta Pasta

My daughters and I needed a quick meatless recipe so we tried this one out. I put a bit too much red pepper for their taste but overall we were all pleasantly surprised. The flavor was better than I expected. We used Barilla's penne Ultra because it is whole wheat and has extra protein which is good for vegetarians. If you cook this, add more spinach then you think you need - it will cook down and you will wish you had more. In future I will add more onions and garlic, and use less tomato.

Black Bean Chicken Salad

Every time I make this I get compliments. My childen gobble it up, and we fight over the leftovers. I love the lime taste, though lemon is 'okay' if you don't have any lime. I am giving this recipe a 5 because it is easy to make, healthy, and though spicy and tasty, is universally appealing. However, I must mention that I found a couple of changes that really enhanced this meal for our family. I added 1 tsp cumin (this was the 'missing' ingredient) and half a finely chopped jalapeno as well as doubling the amount of chili. With the changes this recipe is beyond a 5 in our house!

Cream of Broccoli Soup I

Delicious! The nutmeg is a perfect touch that gives it a unique flavor. I used mozzarella instead of cheddar bc that's all I had on hand and it is very tasty!

Cook the macaroni noodles as directed. Heat milk, add cheese and mix til melted. Then cool about 1/2 cup mixture and add to eggs. This prevents curdling. Return egg mixture to milk/cheese and mix well with macaroni, then place in prepared dish to bake.

Bacon Cheddar Deviled Eggs

Bacon and cheese are a nice addition. Instead of 1/2 cup of mayo, I use 2-3 TBSP Hellman's real mayo and 3 oz pkg of softened cream cheese, the flavor is great, my family loves it.

Good Old Fashioned Pancakes

Been making this one for 50 yrs and ALWAYS add vanilla. Tip: add 1 extra Tsp to each recipe for baking. One can also substitute flavored creamer for the milk. My family loves these.
