Honey Walnut Shrimp

I halved the honey because I thought the honey taste was too strong... but otherwise, this is great! The restaraunts here call it Coconut Chicken and I was having a heck of a time finding the recipe. Here it is!!

Cream Cheese, Garlic, and Chive Stuffed Chicken

I used the basic concept, but I used onion & chive cream cheese with minced garlic and other seasonings, rolled with one piece of bacon each way so the cream cheese didn't run out. I sprinkled the top with basil and rosemary, and shredded cheese in the last 5 minutes. My hubby loved it, and I thought it was good, but not quite 5 stars for me.

Toffee Chocolate Chip Cookies

This was a good recipe but I was expecting more of a toffee flavor, which I really didn't get. I'll either add more brickle or I'll chop up heath bars like suggested by other reviewers. I'm also going to try some espresso powder in the mix to see if I can evoke the same flavor as Ben and Jerry's Coffee Heath Bar Crunch.

Apple Pie Slices

These are super delicious, but I was under the impression that this would be easier than making an actual pie and it wasn't. I still had to make the dough and roll it out. I imagine it wouldn't be too difficult to substitute a storebought pie crust, though, if one wanted something slightly simpler.

Banana Cheesecake with Caramel Sauce

Something was amiss for me with this recipe and I can't really put my finger on it. I think it was the overpowering banana flavor combined with the cheese. It's just a really rich desert that I wish had more caramel flavor throughout instead of just on top. Note to people trying this: make the caramel sauce on the side and dress each slice instead of covering the whole thing like I did. The sauce becomes strange and watery/milky in the fridge.

Beth's Spicy Oatmeal Raisin Cookies

DELICIOUS! The perfect amount of spice and sweet. Even the diehard anti-oatmeal raisin people at my work ate these. I never use shortening in my cookies, though, so I just substituted that portion with butter.

Brazilian Coffee Cookies

This was just okay for me. I think what really turned me off was the granules of instant coffee that I'd crunch into while I was eating the cookie. If I ever make this again, I'll try a powder or I'll use fresh-brewed coffee.

Chocolate Cheesecake II

After quite a few Thanksgivings, my mother had finally confessed to me that she hated Pumpkin Pie, and since she's not a "dessert person" she put me in charge of making something else. I made this and it was gone within the hour. Now it's a part of our holiday traditions. So, thank you for a delicious recipe. I did tweak it just slightly: I used twice the amount of cream in the ganache so it was more pliable and easier to cut into straight out of the fridge. Fantastic!

Elvis Cookies

I would have given this a five, but I had some serious cooking time issues. The recipe said 10 minutes but I was leaving mine in for about 5 minutes longer, which was really surprising, because my oven runs hot and I usually have to watch everything I put in there. I did tweak it a little: I pre-blended my bananas with about 1/4c honey to add another layer of flavor. I also sprinkled cinnamon sugar over the top of the cookies before I baked them. Delicious cookie.

Baked Macaroni and Cheese

I ended up using both elbows and shells... I had a little of each. I also dabbed a little extra butter on the top. Instead of cheddar cheese, I used a taco blend and added some muenster. I did forget to season the recipe and a little seasoning would have made it even better, but the different cheeses helped. All in all it was pretty much what I was looking for :)

Lemon Sauce for Salmon Patties

Make-Ahead Mashed Potatoes

I've made these for Thanksgiving the last three years. When you're cooking for 15 people, the last thing you want to be doing is mashing potatoes at the last minute. They've gotten rave reviews from the family, and we never have any leftovers. My only change would be to go with no fat cream cheese and sour cream.

Wilted Spinach

Very good flavor, but I think there is a misprint on the quantity of spinach. We didn't have any pine nuts, so I substituted some chopped walnuts instead. I'll add it to my list of regulars.

Mayonnaise Biscuits

Interesting. I thought they tasted almost more like a pastry than a biscuit. They were good though, and my husband liked them even though he's not a mayo fan.
