Penne Pasta with Spinach and Bacon

Reviewed: May 28, 2008
In my opinion, this recipe was a little off. I followed the recipe to the T. The only thing I changed was, I added onion, roasted red pepper, fresh tomatoe instead of canned and grilled chicken. The dish was way too greasy and heavy. Maybe it was because the bacon I used was not quality bacon. It was too smokey and the flavor was....not a hit. I suggest using high quality bacon. Make sure the spinach doesn't overwilt, pour out a little of the bacon grease and add a little pasta water, add fresh basil, some shreaded parm. and maybe a differant shaped pasta would help too. Sorry to leave a bad review but I was very disappointed with this recipe and this website hardly ever produces a dish like i made today. Procede with caution, because it does have potential.

Artichoke Chicken

Reviewed: May 14, 2008
Yummy! Just made this for me and DH. We both loved it. Used 1/2 light mayo and 1/2 greek yogurt--to save on calories. It was excellent. Didn't have garlic pepper--so used dried garlic/parsley and some fresh ground pepper. We ate half tonight. I chopped the leftovers and plan on using it as a topping for whole wheat angel hair for dinner tomorrow night. Glad for the extra juice in pan as it will work with tomorrow nights pasta.

Unbelievably Awesome Barbeque Chicken Pizza

Reviewed: Feb. 27, 2008
This was a great pizza! I used 2 cups of mozzarella and sprinkled some Cheddar cheese on top too. I would warn people to be careful when cooking the chicken w/ BBQ sauce---the sauce I used must have had a lot of sugar in it b/c it burned after about 5 minutes on one side. I just peeled the burnt layer off and it still tasted great. Just a word of warning! The sesame oil gave a great taste, but we only used 1 TB and 1 TB olive oil so it wasn't overpowering. Thanks for sharing!

Popovers

Reviewed: Feb. 22, 2008
Perfect! I love this recipe. Easy and delicious! Made them to go with a traditional roast dinner and they were a huge hit! Much easier and better than the William Sonoma recipe I have been using that was included with my popover pan. I wonder if one could use beef drippings instead of butter in the popover pan for more of a "Yorkshire pudding" popover..or should the beef drippings replace the butter in the batter? or leave the recipe as is....Any thoughts???

Cabbage Fat-Burning Soup

Reviewed: Jan. 24, 2008
This soup is SOO GOOD. I did however add a can each of, black eyed peas, white beans, red beans, and lima beans. I used canned carrot (2c). # med. sized onions and omited the celery and pepper because those are nasty (in my opinion). I also added 3c. barley to it but had to also add more water. How much? A BUNCH. It made so much soup that I had to make 4 trips to the fridge just to put it away. It was soooo good though. OH also, I used 1 small green cabbabe and 1 small red cabbage. GREAT GREAT GREAT. The only seasoning it needed was pepper. I also added some crushed red pepper. Made it with low sodium v8 and low sodium beef broth. Also used 2c. diced tomatoes...If you do add beans like I did, don't forget to rince them off.

Curried Cashew, Pear, and Grape Salad

Reviewed: Jan. 20, 2008
I made this for a party this weekend and it was a big hit. Here are the modifications I made to the recipe. I used pancetta instead of regular bacon----it is leaner and has a mild flavor.I think it is "meatier" than bacon. I used white balsamic pear infused vineagar and half the olive oil (as suggested by other reviewers) in the dressing. I also added goat cheese. I didn't dress the salad--left dressing on the side. Everyone loved it. I will make this one over and over again.

Cheesy Spinach Lasagna

Reviewed: Jan. 1, 2008
This recipe produced quite a dense product. It tasted good, but was better (in my opinion) with a drizzle of olive oil and sprinkle of salt.

These cookies were awesome! I didn't get to eat much of them because they were gifts for people for Christmas. My friend's mother loved them and asked for the recipe. Your awesome, Tanya.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Dec. 16, 2007
This is the best cookie recipe ever. I used m&ms and WOW. Other's said they had a problem with them getting had the next day. If that happens. Put them in a container with a half of a slice of bread and that will keep them soft and chewy. Its a little secret that works great.

Soft Chocolate Mint Cookies

Reviewed: Dec. 7, 2007
I was a bit hesitant to make this cookie. I wasn't impressed with the reviews. However, my little brother picked it out to make. So, we made it. Needless to say. This cookie was GREAT. I added choc. chips (any candy would do, but candy is definatly needed to make this cookie out of this world). I didn't have buttermilk so i mixed a cup of milk with a tsp of vinager and used 1/4 cup of it like the recipe called for. This was a great cookie. Soft and chewy with a slight crunch. Mine didn't turn out really cakey like others said. I let my dough cool though in the fridge. Almost tasted like mint brownie cookies. I will definatly be making these again.

Fruitcake

Reviewed: Dec. 4, 2007
So far, so good! I'm not a fan of fruitcake, but last year started the tradition of making it for my father-in-law for Christmas. I used one 9x5" loaf pan, and two 5x3" pans, and had the perfect amount of batter. It baked very nicely in about an hour and a half and is in the aging stage right now. Seems like the perfect texture and smell for all those fruitcake lovers to enjoy.
