Amazingly Easy Irish Soda Bread

Super easy with my Kitchenaid. My husband was wary to try some, but once he did he almost ate the entire loaf :) The longer it sat, the better it tasted (although it was all gone within two days).

One Bowl Chocolate Cake III

I have to say this is amazing! Fast and delicious! Others mention changing the amount of cocoa powder. Here's the scoop: if you are using high quality cocoa, you can definitely reduce it. If you are using regular hershey's cocoa, you can increase it up to 1 cup. But remember, it's still personal preference as to how rich you like your cake and what you plan to top it with. I recently served it frosting free with vanilla ice cream topped with strawberries and bananas and it was fantastic!

Easy Spicy Chicken and Rice

Very good, I diced and browned the chicken and used instant (boil in bag) rice. I also added a little onion and 1/2 cup sour cream and a cup of chedder before baking. With about five minutes left top it with some crushed tortilla chips, black olives, and enough cheese to just cover the top. Excellent!

Stuffed Shells I

I made this for my Husband and I and we loved it! The only thing that I have done different was I added a pound of ground turkey. I took the ground turkey and while it was raw I seasoned it with garlic, onion, and Italian seasonings and then cooked it on the stove (just like I would hamburger) while my shells where cooking after my turkey was done I set it aside to cool and mixed my cheese mix together I added the same spices to it as I did the turkey I than added the cooked turkey to the cheese mix and stirred it well than stuffed it in the shells. My husband and I loved it!!

Chicken Cordon Bleu II

I followed the recipe exactly and was very happy with the outcome. I always like to try every recipe out exactly so I can rate it based on how it is written. It's funny how some people can change it up and then rate it on that outcome. Anyway... it was good. I think next time I'll roll my chicken the best I can after pounding it to about 1/2" thick. Everyone loved it... it's not easy in my house to find a recipe that every single person loves!! Dinner came and it was quiet!! Thanks for sharing!

Molten Chocolate Cakes With Sugar-Coated Raspberries

Very gourmet, especially considering how fast and easy they are. Served them with whipping cream and regular raspberries rather than sugar-coated ones, which seemed to be a pretty good combination. Much better straight out of the oven than reheated in the microwave, though.

Asian Style Meatloaf

I love hoisin sauce and meatloaf, so I was very excited to try this recipe. After reading the other reviews, I flipped the proportions of the ketchup and hoisin, and it still tasted plenty hoisiny. The meatloaf was very good on top of a pile of white rice.

Basic Flaky Pie Crust

I am giving this a 5 star rating b/c the crust was phenominal... however I was dissapointed that the directions didn't indicate whether this was for a double or single. I only made one and it was not enough for a top and bottom. So now I know for next time. Otherwise, it was so easy to make and most ingredients i usually have on hand... and if I don't have the shortening, I do have butter! Thank you!

Gingered Pork Chops in Orange Juice

I very loosely followed the recipe. Didn't have ginger, balsamic or brandy so I used garlic and soy sauce. I did use the oj. Came out completely different flavor than intended but it was very good. Kids ate it - that's usually testimony to add it to my recipe box.

Truck-Stop Buttermilk Pancakes

YUMMIE!!! This makes a whole lot of pancakes!!! Which was fine with me. I just bag them and put them in the freezer for the kids during the week! In some of the pancakes I added choco chips, blueberries and cinnamon/applesauce mixture! This recipe is definitely a keeper!!! I didn't have any buttermilk...so i just added lemon to some milk and there u go! Thank You!

Italian Meatball Sandwich Casserole

My kids loved it...I thought it wasn't bad...my husband couldn't stand it! So there you have it!! I did toast the bread first before cutting up. I didn't use mayo, instead i used half ricotta/cream cheese mixture with an egg in it! I added lots of cheese to it...so it tasted good, just not quite what i expected. My husband said he'd rather have the sandwich version...men, i tell ya! lol

Good Old Fashioned Pancakes

WOW...this makes a WHOLE lot of pancakes..which is good!! I just placed leftovers in freezer ziploc bags...the girls take them out during the week for a quick breakfast! I only tweaked a little...I used self-rising flour and I added a dash of vanilla. I also alternated choco chips in them in 1 batch, blueberries in the next...then the rest plain for my husband! Keeper..this is way better than boxed pancake mix!!

Catherine's Spicy Chicken Soup

Easy and tastes awesome. Reminds me of a really good and spicy tortilla soup. I baked flour tortillas (brushed with olive oil) and cut into triangles to use for dipping. Even my picky kids ate it!
