Chocolate Frosting I

Reviewed: Dec. 26, 2009
This recipe needs doctoring. I use 1/2 cup of real butter, 3/4 cup cocoa, 1/3 cup milk, 1/2 tsp salt, 1 tsp vanilla, and 3 cups powder sugar and it is perfect! Also, sift all dry ingredients to ensure a smooth texture. Give it a try this way and you'll be happy!

Strawberry Ricotta Stuffed Whole Grain French Toast

Reviewed: Dec. 25, 2009
I made this for Christmas morning. I mixed ricotta and cream cheese with some Splenda. I made a few of them with sliced Hawaiian bread and the rest with wheat bread. I had a little bit of frozen mixed berries so I used them up. For the rest I used a low-sugar strawberry jam. We topped them with Redi-Whip and they were a hit! These can be made with almost any kind of bread and fruits. Experiment and enjoy!

Peanut Butter Cup Cookies

Reviewed: Dec. 25, 2009
Don't even bother making a single batch. So good. Additional tips (I haven't read every review, so this may have already been written): let cookies cool to warm in pan, then freeze about 10 minutes or till set, then place muffin tin cups in a shallow sinkful of hot water for 8-10 seconds. Twist gently, and they should come out beautifully.

Super-Delicious Zuppa Toscana

Reviewed: Dec. 24, 2009
Loooooved this soup! My family and our guest went on and on about how good it was, better than the chain restaurant's version! I used kale instead of spinach, but I think either would be good. Thanks for a great soup recipe, definitely a keeper.

Roquefort Pear Salad

Reviewed: Dec. 24, 2009
This was our salad tonight, Christmas Eve. It was AWESOME and I will be making it again. I used Romaine (personal preference) and doubled the dressing (not the oil, it was fine). My fellow diners didn't want avocado, but I did, so just added some to mine. It might even be my favorite salad (since I can make it at home). If you like these ingredients, you will LOVE this salad. Thank you!

Cinnomon Rock Candy

This is a must have for the holiday season. It is full of flavor. Cinnomon oil can be found at hobby stores or ask your pharmisist. I know that sounds strange but they can order it.

By using puffed corn (don't have to deal with the old maids or the hulls), it works out beautifully and is just as delicious.

I should have read the reviews first; I followed the original directions and it came out looking like a waterbed. Definitely bake at 350 for 50 minutes and cover the outer crust, and definitely leave it in the oven after you turn it off.

Easy BBQ Flank Steak with Chipotle Mayo

Reviewed: Dec. 24, 2009
Excellent! Made for a big family dinner and everyone raved! Will be making for Christmas dinner because it was so good and so much easier to prepare than turkey. I only had time to let this marinade for about four hours, and it was still tenderr and flavorful. The sauce is great, too. The only change I made was to add a bit more honey - probably about 2 T more.

I added a few more herbs as I like lots of flavor: 1/2 t of dried parsley, 1/2 t of dried chives and 1 clove of garlic. I also used light sour cream and 2% shredded cheddar and no one knew the difference! Rave reviews put this one in my recipe box for good! Thank you!

White Chip Chocolate Cookies

Reviewed: Dec. 23, 2009
I made this into a bar cookie recipe. I made the following changes. 2/3 C Splenda and 2/3 C Splenda Brown Sugar Blend in place of the white sugar. About 6 oz of cream cheese and I used the Nestle White Chocolate Christmas morsels. I baked it at 350 for 15-18 mins. My husband 'lovingly' exclaimed... reindeer poop! :)

I have made this recipe several times and it always turns out. It did crack last time I made it but I'm sure that's some fault of mine and not the recipe. Always a big hit with the family!

Cream Cheese Cookie Cups

Reviewed: Dec. 23, 2009
I love cheesecake and was very excited to make these. Followed the recipe but slightly reduced the amount of powdered sugar (1/4 cup or so, per others' recommendations). I did not enjoy this recipe at all. Filling was too much and just tasted "off" - I don't know how else to explain it. I was disappointed!

Used my food processor to chop up candy canes (pulse). My only complaint is that I wish I would have made them a little thicker. I tried to spread the entire batter out over the baking sheet.

Easy OREO Truffles

Reviewed: Dec. 22, 2009
These are sooo good. I dipped them in chocolate and white chocolate and put them in a tin to give as gifts for Christmas. Just remember to keep these refrigerated as they do not keep well left out due to the cream cheese. This is my 2nd year making these to give as gifts and they are such a hit. You will look like a star! Insanely easy too!
