Blackberry Cobbler

Reviewed: Aug. 5, 2007
Very good and very easy... Please note that this IS NOT a rolled crust cobbler. If that's what you are looking for, there are many other great recipes on this site for that kind of cobbler. Personally, I prefer the doughy texture of this cobbler as opposed to the rolled crust of the pie. The crust soaks up the juices from the berries (which sink to the bottom) and it makes a rich, delicious dessert. Great with some vanilla ice cream!

The eggplant was good and the feta cheese and tomatoes really add the perfect amount of flavor.

Deep-Dish Blackberry Pie

Reviewed: Aug. 5, 2007
MMMMMM! This recipe was spectacular! I'd been searching for a recipe for blackberry cobbler, and was having no luck until I came across this one. I doubled the crust ingredients and made a bottom and top crust. Next time I also may double the blackberry filling. Still the best recipe yet I've found for a delicious blackberry cobbler (or pie)!

Personally don't like pineapple, but my husband and his parents love this. Due to request, next time I will add onion and red pepper.

Baked Salmon II

Reviewed: Jul. 23, 2007
I thought this was an absolutely awesome marinade/cooking liquid for the salmon. It is perfectly subtle, as it gives a definite flavor to the fish, without completely masking it. Super easy (had all the ingredients on hand) and even my two year old loved it. Will definitely make again!

Wisconsin Bratwurst

Reviewed: Jul. 22, 2007
I couldn't find fresh bratwurst, so I used the packaged cooked ones, and boiling them in the marinade before grilling made them so tender and added so much flavor. I cooked the liquid down and the onions were AWESOME! Great recipe for brat lovers!

Amy's Healthy Fruity

MMMMMM! What a tasty and healthy way to get in your servings of fruit! I like to pre-assemble the ingredients the night before and make this for breakfast. Like most reviewers, I've left the soy powder out, and it's still great. I've also used blackberries instead of blueberries, and altered the ingredients due to the amount I've had on hand. Easy to make and worth a try! BTW for those that are interested, a 6" banana has 0g fat, 24g carbs, 1g protein and about 90 calories.

Very yummy and very easy! Watch how much oil you use cause it's easy to overdo it and have greasy spinach.

Baked Swiss Steak

Very good recipe, exactly what I was looking for... I added a couple cloves of garlic to the sauce for personal preference... YUM! Also, don't know if it was just my pan or steaks or what, but after 1 1/2 hours, the steak kinda dried out. Next time, I'll start checking around an hour.

Chocolate Cobbler

Reviewed: May 26, 2007
I honestly would have given this recipe three and a half stars, but since that's not possible, I've given it the benefit of four. I've had similar desserts in restaurants, and this one doesn't quite make the mark. Although it is good for a chocolate fix, this is not the decadent dessert I was looking for. It would make a somewhat striking appearance next to standard desserts at a potluck dinner, but I think the ingredients need to be tweaked to be closer to a restaurant dish.

Shrimp Scampi V

Reviewed: May 19, 2007
Super fast, super yummy recipe for quick shrimp scampi! Great way to save time and money versus going out for dinner, without much compromise on taste... I used chk broth instead of wine (had none on hand) and upped the garlic for personal preference. My boyfriend and I both loved it. Definitely making it's way into the dinner rotation... Oh, BTW, several of the negative reviews of this recipe mention altering the amt of lemon juice, which isn't in the recipe... maybe they reviewed the wrong one?

Great basic recipe! Modify it with your favorite seasonings (I used garlic powder, onion powder and a little Cajun seasoning) to make it your own or just make it the old-fashioned way. Great comfort food, thanks for the recipe!

Quick and Easy Tuna Casserole

Reviewed: May 3, 2007
Very good for a quick and easy tuna casserole. Doesn't have the crispy topping of a baked casserole, but much quicker and much less clean up. I thought it was very thick and added 1/3 cup milk at the end to make it a little creamier. I also added an extra can of tuna and 5 slices American cheese and 1/2 cup shredded sharp cheddar just based on my personal preference. Very good meal for when you want something quick and easy!

I'm sure it's just my personal preference, but the thick cheesy sauce was too much for the fish :(... Of course, this may be a good recipe to trick kids and others that won't eat fish into liking it :)
