Triple-Cheese Macaroni

This was a very good recipe! It was probably my favorite mac and cheese recipe that I've tried. I did make a couple of changes. I used gluten free macaroni because of food allergies and it worked great. I followed the same cooking instructions with the rice pasta and it worked great. I also used colby cheese instead of the mild and sharp cheddar cheeses. Neither of these changes will alter the taste much so I feel like I got a good sense for the recipe. It was very very good. I'm not a fan of the creamy processed mac & cheese recipes, I like the old fashioned kind and this is a good old fashioned recipe. Great flavor, great recipe. The only change I would make is to reduce the amount of mustard in the recipe. It gives it a great kick, but was a little too strong. Maybe a little less than a tbsp. I will definitely make this one again! I got lots of compliments!

Maple Walnut Pie

Very good but I wonder if it is really necessary to heat the syrup/butter mixture first? I almost ended up with with scrambled eggs untill I waited for the syrup mixture to cool. I think next time I will just melt the butter on its own and proceed as with pecan pie; no need to heat the sugar mix. Also, since I am fortunate to have access to real maple syrup, I didn't use the artificial flavoring, cut back brown sugar to 1/3 cup and still this was too sweet; I will eliminate the brown sugar altogether next time- but there will definately BE a next time- YUMMY!

Peanut Butter Shortbread Cookies

This recipe has been floating around awhile going by various names (flourless peanut butter cookies is one), but by any name it's delicious. It really doesn't resemble shortbread if you ask me. I tried this recipe last year when I made the switch to gluten free and my husband thought it was the most amazing thing he had ever tasted. I honestly don't know why anyone would want to add flour to peanut butter cookies after trying these. This really is the best peanut butter cookie around!
