Ham with Pineapple

This recipe was *exactly* what I had hoped it would be: a good old-fashioned baked ham--just like Mom used to make! I served this at Thanksgiving and used the leftovers to make ham & swiss quiches. Thanks for sharing!

BAKER'S® ONE BOWL Coconut Macaroons

I just finished a three-way coconut macaroon bake-off, and this recipe was the winner. It's not quite as sweet as the recipes that call for sweetened condensed milk (although it's still very sweet, don't worry), and the almond extract gives the cookies some extra pizzazz. This recipe's texture is also good; chewy, but not too sticky.

Spicy Creamy Tomato Sauce

What's not to love about tomatoes, basil, balsamic vinegar, and sinfully creamy mascarpone cheese? The spiciness knocks this sauce out of the park. I like to make this recipe when I need to use up some extra onions. Thanks ANGIBEAN!

Shredded Brussels Sprouts

This was the perfect recipe to get my super picky family to eat brussels sprouts. The first time I made it, I followed the recipe exactly. Next time around, I was out of pine nuts so substituted slivered almonds. Just as good. Excellent mixed in rice.

Playgroup Granola Bars

These are great! I didn't have wheat germ so left it out. Next time I'll use that and maybe some dried cranberries. I added chocolate chips and sultanas. Didn't care for the chocolate in these. I'll cut down on brown sugar as I thought they were pretty sweet. Overall perfect and my son loved them!

Chinese Chicken Fried Rice II

Fresh Vegetable Stir-Fry with Peppery Orange Beef

This was confusing so just ended up dumping it all in the wok. It worked fine. No need to have extra pans. I ran out of sesame oil so I just heated some oil and threw in a handful of sesame seeds. Didn't have teriyaki so just used soy. I liked it...it was a little too sweet, but overall it turned out pretty good.

Easy Apple Cinnamon Muffins

These were delicious! I used a little more milk. These were moist and had a wonderful apple cinnamon flavor. Didn't do the struesal topping because we ran out of time so we just left them plain, but I can just imagine how much better they would have been had I used it. This will be a keeper in my recipe box.

Grandma's Corn Bread Dressing

Call me the odd one out, but I did the recipe as is and I loved it. I've never made cornbread dressing and never grew up on it so I have nothing to compare it to, really. Not to dry...not to wet. I did add more sage because I love alot of sage in my stuffing. I made this with baked chicken breasts, gravy, and vegetables. A keeper!

I used another person's suggestion and used a 16-oz. jar of salsa in place of the canned tomatoes and omitted the onion. The salsa gave it just the right kick! [I also omitted the crushed tortilla chips & green onion.]

Lemon Cream Pasta with Chicken

I liked it. I added shredded parmesan on top when it was served. It was a little too lemony, but I was pleased with how the flavors blended. Will keep it in my recipe box. My 3 year old ate all of it so because of that it's a keeper.

Maple Bacon Pancake

I made this a savory dish using onions, bacon and cheese. No syrup and no sugar. This was for dinner and my husband, being Australian, doesn't understand the whole breakfast for dinner type thing or sugar with bacon..lol...so I made it without any sweetness. I didn't have baking mix so I used the recipe from a user the flour, baking powder, baking soda and salt. It was fine, but not as moist as I would have wanted it. I served it with sour cream, fried potatos and green beans. I actually enjoyed it and it's so good with sour cream. Will try it for breakfast one morning and see how it turns out with syrup and sugar.

Baked French Toast

I thought this was delicious. I loved the sweetness of it. I was a little confused on how much milk and cream to use since I didn't have half and half here. So I used half milk and half cream and then a little more milk. I used the 8 eggs, but I think I might use less next time. It was very eggy underneath, but it blended well. I made it for a women's breakfast and everyone liked it. They said it tasted like bread and butter pudding and I have to agree so here in Australia it could pass for breakfast, brunch, or dessert. :-) I'd never made this before so it was a nice change.

Ricotta Fettuccine Alfredo with Broccoli

I didn't mind this. I didn't have broccoli so I used frozen spinach. I also put in musrooms and chicken. I cooked the pasta...while that was cooking I made the sauce...I steamed the spinach and then fried up the mushrooms and chicken. When the mushrooms and chicken were done and put the sauce back in to heat it up some more then I poured it over the pasta. It wasn't fat free as I used whole milk and full cream butter...but it turned out really nice. Oh and I added powdered garlic to the sauce as well as parsley and salt and pepper.

Quick and Easy Brownies

This extremely rich. I used the full amount of butter, but only 1 cup of flour. Next time I'll use 1/2 cup of butter because it made it almost sickening with the amount of butter that was in it. They are definitely the way a brownie should be, but very very rich. Don't need icing at all with this recipe. Very chocolaty..very moist...and very rich!
