Vanilla Wafer Cookies

Very good cookies but don't stay soft. They were hard the next day. I have yet to find a cookie recipe where the cookies stay soft. I like chewy cookies.

MMMMMMM.. that's it! This recipe is definitely a keeper. As others have suggested, do double the gravy (maybe even triple)!.

Baked Macaroni and Cheese III

Reviewed: Apr. 9, 2009
First off, I left out the eggs because I forgot I didn't have any when I started making this. I used about 4 Tbs. of butter.. because I'm not health conscience at all! Other than that, followed the recipe exactly and it was heavenly! My kids love it.. boyfriend loves it.. and I'll be so glad when I get hungry around midnight so I can have this for a snack!

Very yummy! I used all cottage cheese because I don't like ricotta all that much. The only other thing I did was add onions and garlic. Thank you

Spinach Dip with Water Chestnuts

Reviewed: Apr. 2, 2009
This dip was so good. I read some other reviews and did increase the spinach amount to 16 ounces. I also used the Knorr Leek Dry soup mix and I decided to chop two cans of water chestnuts. I substituted the sour cream and mayo with the light versions. This was still incredibly yummy and was much lower in fat. Nobody would ever know. It was a big hit at the party.

Pineapple Upside-Down Cake III

Reviewed: Mar. 10, 2009
I absolutely love pineapple. There aren't too many ways you can serve it that I won't eat it, but I was not at all impressed with this recipe. It came out more like a shortcake and was way too dry. I waited a day as the recipe suggested and still wasn't happy. I will definitely be looking for another recipe.

Mom's Best Meatloaf

Reviewed: Mar. 9, 2009
I was so excited about this recipe because of all the rave reviews, so I followed the recipe exactly and was mildly disappointed. It was alright but nothing spectacular. My children gobbled it right up. My boyfriend ate it but wasn't overly impressed. I'll be looking for another meatloaf recipe. Thanks anyway!

Pumpkin Bread VI

Reviewed: Mar. 9, 2009
Great recipe. I didn't use wheat flour because I only had all-purpose flour on hand. I didn't have all spice or nutmeg either.. so I just used cinnamon. Still, this bread was scrumptious! Very moist and smelled delightful. My family didn't get to eat much of it because I couldn't keep myself from snacking on it throughout the day!

Linda's Lasagna

Reviewed: Mar. 9, 2009
This was my first time making lasagna and I was extremely pleased. The only thing I left out was the onions [not a huge fan] but other than that, I followed the recipe to the T and it was delicious. Even my boyfriend, who swore no one could beat his mom's lasagna, has changed his tune. Great recipe!

Bran Flakes Muffins with Raisins

Reviewed: Mar. 9, 2009
I read other reviews first and followed suit, using half the salt and halving the baking time. I used plain bran flakes because I'm not a big fan of raisins. I also crushed the flakes, added 1/2 cup of blueberries, 2 Tbsp. of honey, and about 1/4 cup more milk [I think this was due to letting the cereal sit for so long to soak up the milk], topped them with some oats and they were absolutely delicious. My boyfriend and kids loved them.. very moist. This one's a keeper!

Nanna's Banana Bread

This is, by far, the best banana bread I've ever made. I followed the recipe exactly.. only omitting the walnuts. My kids despise them! I gave it 4 stars, just in case there's a better recipe out there.. but I'll definitely be sharing this one with my family!

Pesto Chicken Florentine

Reviewed: Mar. 4, 2009
I agree with a few of the earlier reviewers, it was just ok. It does seem a bit bland and needs something extra to kick it up a notch. I would recommend seasoning your chicken breasts with salt and pepper before cooking. The chicken lacked any flavor. Next time to save time & to create less pots to clean, I’m just going to use jarred alfredo sauce and maybe add in a few extras like sun-dried tomatoes or artichokes.

Fried Chicken with Creamy Gravy

Reviewed: Mar. 4, 2009
I followed the recipe exactly and this was very, very bland; especially the gravy. This dish still has potential to be great, I think next time I’ll follow some of the suggestions given about alterations that were done to give this a 5-star rating, but as is it’s only a 3.

Red Garlic Mashed Potatoes

If you leave out the sugar these mashed potatoes will definitely become the best you’ve ever had. Next time I’ll add more butter & half-and-half to make them a little (more) creamier.
