Classic Waffles

This is a great recipe with one minor change. Instead of beating the whole egg with the milk and butter, I only mixed the egg yolks and then mixed into the batter. The egg whites I set aside and then beat them separately until stiff and then folded into the batter. This made the waffles fluffier.

Marinated Veggies

This was very good. I marinated the veggies for two hours. used grill basket to cook on grill. It all came together very well, everyone liked it. I will be making this again soon.

Tandoori Chicken II

This was ok. The chicken was very bland. I doubled the spices, except for red pepper. My husband said it was good, but needs more spice. My kids said they did not care for it. I have to agree with the kids, will not make again.

Creamy Chicken and Broccoli Casserole

Easy and good mid-week dinner. I hate making changes before reviewing a recipe, but I had to use fresh chicken breast. I diced the breast and browned it, then I added the broccoli and followed the recipe from there. I don't think there is a need to use two skillets, one worked fine for me. I also chopped the broccoli in the food processor, and I used more than called for. I didn't add the chili pepper, but I did use the sour cream. My picky 5-year-old ate it and my husband finished the leftovers the next day. I suggest adding fresh garlic. Next time I'm going to add celery and garlic with the chicken, and add carrots with the broccoli.

Potato, Broccoli and Cheese Soup

Wow, this is really good, and easy for a soup. I made it twice recently, because it went over so well. Both times I had to use frozen broccoli. The first time I followed the recipe as written. Yum! The second time I added garlic with the onion, I added fresh carrots with the broccoli, and I added about 1/2 cup of sour cream just to see how it would taste. Both ways are really good, so if you are creative, create away; either way you're going to have a great soup.

Cream Cheese Cookie Cups

I made 4 batches of these this morning to take to a family outing tomorrow. They were easy to make and tasted great. One thing - my first batch I didn't grease the pan - and lost about 4 of the cookie cups because they stuck. Lightly grease your muffin cups - you won't be sorry!! And flouring your fingertips definitely helps. I also put the filling in a ziploc baggie, snipped the edge & piped it into the cups. I'm sure these will be a big hit!

Marinade for Steak I

Spicy Mexican Salad

This salad turned out really good. I used the jalapeno ranch dressing (I found it in the refrigerated section with the lettuce) and it was really good with it. I also left out half of the pinto beans and put in a little extra lettuce to give it more of a "salad" vibe. Since other reviewers commented on the chips becoming soggy, I just sprinkled them onto the individual servings to avoid messing up the leftovers. Everyone loved it, it went well with a Mexican-themed meal, and is definitely a keeper.

Churros II

I made this for a party/meeting and they were a hit. Everyone loved them. I will definitely make them again. I did make sure to use a cloth-type pastry bag and it worked great. I had to pinch each one off into the oil as they didn't just break off, which was totally fine. They did cook pretty fast, so I was getting behind on coating them with the cinnamon/sugar. So, I figured out a quick (and much easier) way to do it. I would scoop them out of the oil with a large flat slotted spoon onto paper towels just long enough to put the next batch into the skillet. I would then dump the hot churros into a ziploc bag with the cinnamon and sugar, shake it up and then just took them out with my hands and placed them on the serving plate. That worked great and they were perfectly coated.

Our Favorite Chocolate Cake

I made the cake part only, not the frosting. I had to add another ounce of chocolate because it wasn't chocolate-y enough for us. I made cupcakes, baked for about 15 minutes, then watched them closely til done (around 18 minutes). Moist, with a nice taste and texture. I'm pleased with this recipe.

Inside Out Ravioli II

Chicken Wild Rice Soup I

This was really good (after I spiced it up a little). I am from Louisiana, so it was a little bland for me. I added garlic powder, cayenne pepper, and white pepper to give it a little kick. Also, I did not have any almonds, so I left them out. I could not find straight-up wild rice, so I used uncle Ben's pre-cooked long grain and wild rice. Anyways, it turned out really good except it was a little too thick. I may decrease the flout a bit next time. Great recipe. Thanks so much!

Stuffed Pork Chops

This was pretty good. I saw the recipe was from a Texan, so I was expecting something a little spicier, but it was more of a midwestern-type dish. I served it with the extra gravy over brown rice and sweet potatoes on the side, so it was a very fallish and cozy dish.
