About me:
I'm born and raised in the mid-west. In fact, I still live in the same area where I was born. I'm married for 23 years and have 4 sons, ages 17 - 22. All but the oldest are living at home. We have always made it a point to sit down to dinner together every night, which in this day and age seems to be a rarity. I love to try new recipes, even though it has been hard to please everyone all of the time! I learned to cook by watching my mother as I was growing up, as well as just by trial and error. One of the first things that my mother bought for me when I first moved out on my own was a cook book. I love to have extended family over for big get-togethers, and they all seem to love the things that I cook for them.

Broccoli Chicken Divan

I need something fast and easy. I just made this for our friends and their grandchildren (who are very picky eaters!) They all loved it...even the little one who normally won't eat chicken. I made a serving for 12. Used frozen broccoli, precooked, drained and used paper towels to absorb excess water. Used Tyson precooked chicken. Didn't have cream of broccoli soup so I substituted a can each of Healthy Request cheddar and cream of chicken soup. Added 1/2 cup low fat sour cream per another reviewer. Children made "all gone" and so did the adults. REALLY SIMPLE TO MAKE!

Banana Cream Cheese Pie

I'm a "non-baker" And this was soooo easy! This is a great "kid friendly" dessert. Decreased sugar by half. Added sliced bananas on top. Didn't have lemon juice so I used a little sprite soda to soak them in. Sliced a large strawberry almost up to the stem, fanned it out and put it in the center. Served each piece with/without topping as desired. Delicious!

Ten Minute Enchilada Sauce

It is *very* easy to burn the flour. It is recommended that you have everything pre-measured as the recipe came together quickly. The sauce seemed oily to me, next time I will halve the oil.
