I admit this dinner sounds kindof creative but its no different than the recipe on the stove top stuffing box.

Mexican Shrimp Cocktail

Took this to a pool party and it was a HIT! Used spicy V8, green onion instead of red, no horseradish....YUMMY! Have made it 4 times already and my friends are still begging for more!!

I have been making this for years and always spoon Apricot Preserves over the top when I first take it out of the oven and sprinkle chopped roasted pecans, diced dried cheries and apricot pieces for a spectacular presentation.
