Rosemary Au Gratin Potatoes

Reviewed: Apr. 11, 2009
These potatoes ended up tasting good, but I gave them 3 stars because if I hadn't added 2 extra cloves of garlic, extra parmesan cheese, sauteed onions and some shredded mozz cheese on top right before the potatoes were done, I don't think they would have had much flavor. I also had to redo the rue/roux because the amount of flour the recipe called for was way too much. It just ended up being a big clumpy mess. Overall though mine turned out pretty good and I cut some of the fat by using fat free evaporated milk instead of half & half. I will make these again, but with the modifications I had to make!

White Bean Chicken Chili

Reviewed: Apr. 8, 2009
Yummo!! I just made this for my husband last night and he raved about it! I took the advice of some of the others comments and also added some other things that we love. We love garlic in this house, so I doubled that. I also added 2 stalks of celery, 1 orange bell pepper and a jalepeno. I traded a 1/2 tsp of paprika for the corriander. I also took 1/3 of the beans and mashed them before putting them in, just to make the chili thicker. Like many others, I used green enchilada sauce instead of tomatillos and used canned corn. It pairs well with roasted tortillas! Fantastic recipe!!! Great job!

Simple White Cake

Reviewed: Apr. 4, 2009
This was a delicious cake and very easy to make! The only reason for just 4 stars is the top bubbled up quite a bit and I had to cut off some of the top to make it even. Plus I am glad I checked it after 30 minutes because the sides were starting to burn. Overall though very yummy and extremely simple!

Onion Cheese Bread

Reviewed: Mar. 29, 2009
Wow!! This was a fabulous bread! The only reasons for not giving it 5 stars was I had to bake it double the time(40 mins) and I am glad I didn't put the cheese on the top right away or it would have burnt! I plopped it on top after pulling it out of the oven and it just melted beautifully. I followed the recipe, but used a mix of cheddar cheese and pepper jack for a little zing! I also added 3 cloves of garlic and 1/4 tsp of cumin. It is delicious!!! I will surely make this again!!

Italian Sausage Lasagna

Reviewed: Mar. 28, 2009
This was pretty yummy! I had never made lasagna before so I was impressed. However, I did have to make changes. First of all I doubled the recipe, but had to add extra sauce because there wasn't enough and I had to use double the cheese even after doubling the recipe. I did add peppers and olives to the sauce as well. Overall, a good recipe that you can modify to your taste buds.

Rolled Buttercream Fondant

Reviewed: Mar. 27, 2009
Excellent recipe!! I was very nervous because I had never made fondant before. It was yummy too! The only thing I did was sub butter for the shortening. The only reason for not giving this a 5 was I had to used about double the powdered sugar for it to be thick enough to roll. Overall though, I loved this!! Thanks! I just changed the rating from 4 to a 5 because I just made my 1st 2 tiered cake and because of this recipe I walked away from the party with sooo much pride! Everyone loved it!!!

Banana Bread V

Reviewed: Mar. 22, 2009
This banana bread is absolutely irresistible. It is so moist and delicious that I cannot seem to have enough of it. I made a few changes though. I added 2 tsp. vanilla extract and instead of using 2 cups of white sugar, i used 2 cups of brown sugar. These small changes make it even better. Trust me, I have made this over a dozen times and it never fails to satisfy.

Soft Sugar Cookies IV

Reviewed: Mar. 22, 2009
This recipe is absolutely delicious. The cookies come out so soft and chewy. I have made these cookies over a dozen times. I recommend using vanilla frosting on these cookies, if you want to make it a little more sweet. It will make these cookies all the more irresistible. Once you set them out, they will be gone in a flash.

Cumin Turkey Burgers

Reviewed: Mar. 15, 2009
These were pretty good, but the cumin is a little too much. You couldn't even taste the other ingredients. Plus they burnt on both sides while cooking. Not a pretty site for guests. We ended up having to put them in the oven for a awhile to get the inside cooked. I did add some red bell pepper for flavor and presentation. I didn't have mustard powder, so I substituted a tbsp. of regular mustard instead. I also just emitted the soy sauce because I thought it would be too salty. Like I said, overall they were yummy, but adjustments need to be made.

Roasted Cajun Potatoes

Reviewed: Mar. 15, 2009
This was my first time to roast potatoes. They were tasty, but I gave them 3 stars because I only had to cook them for 25 minutes and they still came out burnt. The flavor was there, but way too spicy! My husband and I love heat, but I needed a lot to drink after eating them. I suggest cutting down on the cayenne pepper and grate the onion instead of chopping it. There were little burnt pieces of onion everywhere!

Turkey Noodle Casserole

Reviewed: Mar. 10, 2009
Tasty idea, but I had to make too many modifications for more than three stars! I cut the recipe in half, but still need to add 1 cup of cream of mushroom soup, plus 1/4 cup of chicken stock to create a creamy sauce. It was also very bland, so I added a 1/4 tsp. cayenne, 1/4 tsp. paprika and 1/4 tsp. cumin. I also used worcestershire sauce instead of soy because I thought it would be too salty. I used 3/4 cup of fat free sour cream to try and add more sauce to the dish. I added some italian breadcrumbs and crushed ritz crackers on the top to create more texture. It tasted really good in the end!

Onion Chicken in Balsamic Sauce

Reviewed: Mar. 3, 2009
I just made this for dinner tonight and thought is was pretty darn tasty...a tad bit too sweet, but I will definately make it again! I dipped the chicken breasts in a mix of flour, pepper and salt before cooking them. I also sauteed the onions and garlic in a different pan from the chicken, but once the chicken had browned, I added them to that pan and started making the sauce. I took the advcice from another review and added the butter and dijon mustard! Very smart because it cuts some of the sweetness. I also added abother tsp of pepper. Overall it's a good recipe!

Chicken with Pepper Cheese Sauce

Reviewed: Mar. 1, 2009
Wow! I just made this for dinner...yummo!! I don't know how anyone could say this is not delicous! I only made a few moderations, because of what I did and didn't have in the house. I did double the sauce and why not?! It is super yummy! I used extra cayenne pepper because my husband loves spicy food and I also used pepper jack cheese since I didn't have jalapeno peppers. I did sub fat free sour cream...it made me feel a little less guilty about such a heavy sauce! Again, WOW!! I loved it!!

Honey Wheat Bread II

Reviewed: Mar. 1, 2009
This was my first time making bread, so I prepared myself for failure, but this bread turned out amazing! Yummo! However I made a few changes, partly because I had to! I thought my kitchen aid would explode! I could only use 3 1/2 cups of flour. I also increased the honey to a 1/2 cup and substituted applesauce for the oil. It did take about 25-30 extra minutes to rise. Anyways, regardless of almost killing my kitchen aid with so much flour, this bread was absolutely delicious!! It boosted my confidence for making bread!

Chocolate Chip Cheesecake Brownies

Reviewed: Feb. 24, 2009
This was a super moist and yummy brownie! I only had 8 ounces of cream cheese, but it was still fabulous! Mine didn't look anything like the picture though! I substituted margarine for the shortening and used one less egg in the brownie batter. I also had to bake the first layer for about 8 minutes before placing the cream cheese layer on top!

Chunky Potato Soup

This was great! I'd never made a cream soup before so I was a bit wary but it was so easy! The only things I did different was "simmer" the veggies for much longer and added more salt, pepper, and cheese.
