Coconut Cream Dessert

Reviewed: Oct. 12, 2009
Made this yesterday. This was really good. I used cool whip but may try making my own whipped cream next time and see if there's a difference. Will also increase bottom crust by 1/2 next time. Only real change I made was to add a small amount of coconut to the pudding before putting it on the cream cheese layer and then added additional chopped pecans to the top. Great recipe for a family gathering or potluck!!

Clone of a Cinnabon

Reviewed: Oct. 12, 2009
These were delicious! First time I've ever cooked anything with yeast. I've always been nervous about baking with yeast. I don't own a breadmaker but per several reviews I managed my way through it without one. My dough didn't rise to double in size by any means, but I'm assuming it's my lack of experience working with yeast that caused this. Either way, it did rise somewhat and after rolling the dough with cinnimon mixture (i mixed all together before spreading on the dough) I let them sit awhile on top of the warm stove and they rose quite a bit more. End result was great. These did not last long at my house and I will most certainly make them again. Hopefully I'll begin to get more acustomed to using yeast and can try more breads ect. Thanks for sharing this wonderful recipe

Slow Cooked Apple Brown Betty

Reviewed: Aug. 2, 2009
I used plums instead of apples & this was awesome! I was just wanting to use up some plums, so I tried it. I did add the 2tsp of lemon juice to the fruit still. I also only used 4-5 pieces of bread; that seemed to be plenty. And, like some1 else I added some vanilla to the butter. Other than that I followed the directions exactly & it turned out to be delicious! The bread was perfect; not crunchy, just moist. And, we topped it with whipped cream ^_^

Hot Bacon Dressing

I have made this several times, reducing the sugar to 1-cup and adding ½ of a medium sized onion, sautéed in the bacon drippings until brown crisp on the edges. This is also excellent on green beans.

Southwestern Egg Rolls

Reviewed: Jun. 12, 2009
Oh....My....God!!!! OMG OMG OMG. These were phenomenal. I use the website so often. I'm always looking for new things to try and can't wait to hear my husband's reviews. But this one is ALL for me! :0) After the first bite I was prepared to tell him he could order pizza for himself and I'd eat the whole darn batch myself LOL. Not necessary at all, he loved them as much as I did. Pretty much made as written with exception that I made 1/2 with tortillas and 1/2 with egg roll wrappers (double-wrapped the egg roll wrapped ones). Both were good, but the egg roll wrappers were by far the best choice for these. These were so, so good. They tasted just like I was hoping they would. 10 starts from me! Thank you so much for posting this recipe!! It is bar far one of my favorites

Chicken Pot Pie IX

WONDERFUL. Boiled the chicken with peas and carrots in chicken broth with a galic clove thrown in and reserved the chicken broth for the sauce. I doubled the sauce but didnt quite use it all. Added a little poultry seasoning and rosemary. prebaked bottom crust about 5-6 minutes. DH RAVED about this one. Said I MUST make this one again. Thanks so much for a wonderful recipe!!

Downeast Maine Pumpkin Bread

Wonderful stuff! I used 1/2cup oil and 1/2 cup applesauce. threw in a few chopped pecans. I found out while making it that I only had whole cloves in the house, no ground cloves, so I left those out. Still turned out good. So moist!! I did have to cook it a few minutes longer than stated but otherwise PERFECT PERFECT PERFECT! Thanks for a great one!

Old Fashioned Onion Rings

Reviewed: Apr. 16, 2009
WOW. Made these last night and LOVED them. I've always wanted to use Panko crumbs, but never remembered to pick them up. I was craving onion rings yesterday and read so many reviews about using the Panko crumbs, so I picked some up on my way home. I'll always keep Panko crumbs on hand. What a difference they make! These rings were wonderful. Husband ate his first one and just kept nodding his head and chewing - nodding and chewing :-) They were a little time consuming, but worth well worth the effort. If I make any changes, it would be to add something, maybe a little to give it a little more kick. Thanks for another keeper!

Sugar Cookie Icing

Reviewed: Apr. 9, 2009
Tried this with the best rolled sugar cookies from the site. First time I've made "icing" instead of frosting. Added extra milk little by little and just kept stiring. Turned out fine. My son was tickled with how shiny the icing was and kept showing everyone. Taste was good. I doubled the recipe and it was more than enough for 30 cookies. Thanks for the post!

The Best Rolled Sugar Cookies

Reviewed: Apr. 6, 2009
Absolutely wonderful! I halfed the recipe and came out with exactly 30 cookies and maybe a TBSP of scrap dough left at the end. Cooked them about 7 minutes and they came out perfect! soft and slightly sweet, but not too much sweet. Only change I made was to double the vanilla. Per other reviews, I used powdered sugar when rolling the cookies out. I've never used sugar, always flour. I'm so glad I read so many of the reviews! What a great idea. I cant believe I've used flour all these years :-) I think that makes a huge difference with the taste of these cookies. Not sure what happened with some of the reviewers who had issues with the dough being too sticky to work with. I chilled my dough for about an hour and had no problems with stickiness. Maybe the key is mixing it all slowly by hand and not using a mixer? Don't know. This has replaced my existing sugar cookie recipe for sure! Thanks for a great recipe and thanks to all who advised on using sugar for rolling instead of flour. One of those wonderful lessons you pick up as you learn more and more about cooking

Delicious Ham and Potato Soup

Reviewed: Apr. 6, 2009
This was some good stuff. I made it over the weekend and it turned out great. A few minor changes; I omitted the boullion and used chicken broth instead of water with the potatoes. I also diced up about 4 slices of center cut bacon and cooked that up. Then added the butter and then lightly sauteed the onion and celery before making a roux with the flour. Threw in some shredded chedder at the last minute and was pretty happy with the result. What a great soup to take to a potluck! Thanks!!

Good stuff! I only cooked one chicken. Marinated overnite. Took about 4-1/2 hours in my oven. My 7 year old, who is the "king of picky" had three helpings. That is the ultimate compliment. Will make this one again.

Enchiladas

Reviewed: Mar. 31, 2009
Made this last night for the first time. Added a few things: Instead of garlic salt, I added some minced garlic when browning the beef. Also added a can of green chilies and some taco seasoning to give it a little more kick than just ground beef. Used Mexican mix cheese instead of Colby. I made only 1/2 recipe as it was just me and hubby eating them and I easily got 8 that were stuffed plenty full. Turned out pretty tasty. Had a side of mexican rice with it and I'm thinking of just adding some of the rice into the filling next time. Hubby said he liked this really well. This one will go into the menu rotation. Thanks!!!

Fish Roll-Ups

Reviewed: Mar. 25, 2009
I thought this was really, really good. I used 1/2 lump crab meat and 1/2 shrimp. Didn't roll the fish, just placed the filets (talapia) in the dish and put the "stuffing" in top. Tasted wonderful. I'm betting that the stuffing be great as a stuffing for mushrooms. I'm going to try that at the next family get together This one's a keeper. Thanks!

Apple-Berry Pie

Reviewed: Mar. 4, 2009
Yum! I wasn't sure about the apples and blackberries together, but there were so many great reviews, and I had blackberries frozen from last summer, so I decided to give it try. WOW! what a wonderful combination. Only a few changes. I added some lemon juice to the apples, and I used more like 3 cups of apples. When I put it into the crust it still looked like it could use more filling. Next time (and there will definately be a next time) I'll maybe add another cup of blackberries as well, and up the other inqr. accordingly. My husband LOVED it.
