Salsa Chicken

Great (and EASY to prepare) entree! My bf and I really liked this. Scaled recipe to 3 servings since I could only find a package of 3 chicken breasts (we could have each easily eaten two...). I was skeptical at first.... How good can chicken seasoned with taco powder, jarred salsa and cheese be? Seemed like a "no brainer" recipe (I usually like to try more challenging recipes). I was sooooo surprised. Only thing I did differently was subbed taco flavored shredded cheddar cheese for the regular variety. Served with taco rice and beer margaritas from this site. Thanks (this one's 'goin in the recipe file!).

Beer Margaritas

Wow! Great (and quick) margarita recipe. I'm really impressed. I usually only like frozen margaritas, but this, served "on the rocks" is fantastic. Also surprising since I do not like beer of any kind at all. Made this tonight with salsa chicken and taco rice (recipes on this site). Nice Mexican meal! Followed recipe toa T (no diet sprite/7-Up here). Used light Corona (accidentally picked up a 6 pack of light beer) and my bf (who drinks beer, including Corona) didn't notice a difference in taste. Made 4 servings, but we had WAY more than 4 margarita glasses full (haha!). Definitely a keeper thanks!

Taco Rice

Great side dish! Served this tonight with salsa chicken and beer margaritas (both from this site). Followed directions to a T except that I substituted taco flavored shredded cheddar cheese for mild cheddar. Opened a 1.25 oz. pkg. of taco seasoning and used 1 T for salsa chicken recipe and rest for this (probably was very close to 1 oz. called for). I was worried at first b\c my rice seemed "soupy", but by the time my bf and I helped ourselves to a second serving, it was just right! Thanks for a great recipe to add to my collection. : )
