Very Berry Cheesecake

Reviewed on Jul. 30, 2008 by BECKMARK
This cheesecake turned out absolutely perfect! The only change I made was to substitute sour cream for the cottage cheese (I was worried about texture issues). It was my first attempt at cheesecake, and it was wonderful! Plus, I have a new use for all the blackberries in my back yard!

Amy's Cilantro Cream Sauce

Reviewed on Jul. 13, 2008 by BECKMARK
This dipping sauce is wonderful! I have tried it several ways- with regular tomatillo salsa, with my favorite brand of tomato salsa, and with a Tequila Lime tomatillo salsa- all with great results! We make it primarily to go with the Southwestern Egg Rolls, and it's delicious!

Fettuccini Alfredo I

Reviewed on May 11, 2008 by BECKMARK
This was pretty good! Not restaurant quality- but very good for a quick fix with things that I always have on hand. I sauteed the butter and flour for just a minute together before adding the milk (whisking it the whole time so I didn't have any lumps in my sauce). I also added garlic salt and LOTS of freshly ground black pepper since some reviewers found the sauce bland. And, I used probably 3/4 C. or 1 C. parmesan cheese. I will definitely make this again.
