Strawberry Spinach Salad III

I selected this one for the lower calories. It was nice. I did add about two tablespoons of sliced almonds to the pan when I browned the sesame seeds. I also minced fresh onion instead of using powder.

Pumpkin Soup

I picked this recipe because of the lower calorie/fat content compared to most soups of this nature. I followed the recipe except for one thing...I used fresh butternut squash instead of pumpkin. We only get pumpkin from India here and it's not as nice. I served it with a swirl of whipping cream and parsley on top. I then cut circles of a small baguette and made a notch in them to sit on the edge of the bowl. The ladies at my luncheon all enjoyed the taste and appearance.

Lemon Pepper Green Beans

Super easy! I put in lemon zest, lemon juice, and ground pepper since I didn't have any lemon pepper. It is a nice, simple side.

Spring Biscotti

Sarah's Tofu Noodle Soup

This soup is great! I put in 10 cups of water based on other suggestions here, but 12 cups would have been just right (the egg noodles soak up a lot of the liquid). I stopped eating meat last year and now I won't even miss chicken noodle soup!

Sourdough Starter - Wheat

This starter works well with nature occuring yeast. It does not use store bought yeast. It produces a great bread as long as you baby the starter like it states in the directions.

Quinoa with Veggies

This dish was DELICIOUS! Even my husband liked it! I did add a few things...about 1 TBS of lemon juice and 1/4 cup of pine nuts toasted. I used minced garlic (1 heaping TBS) because I didn't have any fresh. I cooked the quinoa in 2 cups of chicken broth instead of water. (not 3! Quinoa is cooked like rice, 1 part quinoa 2 parts liquid) This was my whole dinner, my husband had it as a side dish to steak. This was incredible and my new favorite way to make quinoa!

Sauceless Garden Lasagna

It was tasty but a little dry, but was at least loaded with vegetables. My quest for the perfect veggie lasagna continues. Also it took me way more than 20 minutes to prepare - more like a whole hour. Just call me Crock Pot because I am a slow cooker!

Whole Wheat and Honey Pizza Dough

This was an excellent recipe. I have FINALLY found the dough I will use for making pizza. My husband raved about this, and I didn't tell him until after he was done that it was whole wheat and he STILL loved it and told me to make it again! ;)

Apple Dip

I made this for a bridal shower and everyone loved it. I sprinkled walnuts on top and it was a huge hit. People thought it was caramel. I probably put in a bit more vanilla than called for.

Unbelievable Chicken

This was good. I followed the recipe exactly for boneless skinless chicken breasts. The meat had really good flavor and was a nice change from my usual teriyaki chicken marinade. I'd make it again for sure.

Harvest Rice Dish

I made the recipe as is except I did not add mushrooms. Also, I only used 1 1/2 onions (which I considered medium) and there were more onions than rice, which made it only 4 stars. I would add 1 medium onion or less and then reduce the amount of butter accordingly to caramelize them, and THEN this would be 5 stars because the rice would be the highlight, not the onion.

Slow Cooker Beef Stew I

My husband really enjoyed this dish. I added a little extra liquid and spices because my crock pot is a very large one and I didn't want things to burn. I let this cook for 6 hours on low (my pot is also very powerful!) and then I added the flour when I got home from work (still 1/4 cup even though I added more liquid). and it turned out very well! My husband said it's worthy to be made again.

Easy Apple Cider

Yum :) After reading the other reviews, I cut back on the sugar by a lot (1 tbsp for 4 servings) because as someone pointed out, people could still add sugar to taste. It was still really sweet! So I give it 4 stars (more like 3.5) because that amount seems high.

Cherry Tomatoes Filled with Goat Cheese

My DH did not like it. He ate one, made a face, and said, wow, the herbs taste really... fresh. Instead of stuffing the rest of the cherry tomatoes I left the feta mixture as a dip, and it didn't make it to the party... 'cause I ate it. It tastes like summer in a bite! I will be making more, and not sharing any with the DH!

Cranberry Apple Raisin Stuffing

I used left-over challah bread and my own home-made cranberry sauce. The stuffing turned out really not sweet enough for my taste, and I am sorry to have wasted my good cranberry sauce. Maybe it would taste better stuffed inside the turkey?

Puerto Rican Pork Roast

Herbed Chicken Nuggets

These were delicious! Cook time was perfect! I marinated my chicken overnight in an olive oil, chicken broth, garlic, salt, pepper blend. Then I used the egg, coated the pieces, and battered them up! I used Italian seasoning for the other spices, plus some garlic salt/pepper. My husband loved these and so did I! He didn't even know there was wheat germ in them...I love sneaking in nutrition! I have some leftover that I plan on turning in to chicken parmesean! :)

Chicken In Basil Cream

This is a "company worthy" meal that is easy enough to make for your family on a week night. I made this exactly like the recipe, except, I boiled the chicken stock for about 4 minutes to reduce it. I also simmered the sauce for about 5 minutes after adding the cream to allow the sauce to reduce additionally. Fresh basil really adds to the flavor. Thanks for a fabulous meal!
