BBQ Pie

Reviewed: Jan. 17, 2008
This only gets four stars because I knew it wouldn't be five without some changes. I always pre-cook ground beef and turkey with seasonings, so I didn't start this from that step. I just added dehydrated onion instead, and also to save time. I made the beans how I would typically make baked beans: BBQ sauce, onion, molasses, brown sugar, smoke sauce, worcestershire sauce - I just mixed it all in a 9 X 13 pan. Then when making the baking mix (separate bowl), I added about 1 Tablespoon of honey. I put shredded sharp Cheddar cheese on top of the mix about 5 minutes before it was nice and golden. I put pre-cooked pieces of sliced maple bacon on the top of the cheese. YUM! My husband's favorite food is baked beans, so he LOVED this!!! I was leary about ground meat in with the beans, but it was a wonderful combination. It'd also be good with pre-cooked chicken (canned or frozen). I actually liked the amount of mix there was for the topping. In a 9 X 13 pan, it made just a light, thin crust.

Sauerkraut Rye Bread

Reviewed: Jan. 13, 2008
This bread is so good! It's wonderful for sandwiches. I didn't get a chance to use it for Reuben sandwiches before the first loaf was all gone! The sauerkraut really adds moisture and flavor. I doubled the caraway seed as others have mentioned. I added 2 teaspoons of vital wheat gluten and the texture was perfect. I made this on the 1.5 lb loaf white bread cycle with light crust and it was just right! Thank you for the great recipe!

Quick and Easy Vegetable Curry

Reviewed: Jan. 10, 2008
Wow, this is so good! It made my house smell yummy for three days! My husband loved it, and he typically dislikes mixed vegetables. I used a green/white bean and carrot mixture. I made some other changes due to preferences and needs (additives). I didn't use diced tomatoes, but rather one, 8-ounce can of tomato sauce. I can't have bouillon cubes, so I used one 8-ounce container of pre-made beef broth. Due to those two changes, I didn't add any water. Yummy! Thank you for the quick and easy way to spice up veggies!

Asian Fire Meat

Reviewed: Jan. 10, 2008
Oh wow, this was good! My husband LOVED it. I added some fresh ginger and some worcestershire sauce to the marinade and left out the sesame oil until cooking (added to pan). When cooking I added chopped cabbage for extra fiber. I served over steamed rice, so the extra marinade was nice for that. This rivals anything at a good Asian restaurant! Thanks so much for the great recipe! I served it with Hawaiian Bread I fresh from the bread machine - the combination of spicy and sweet was awesome!

Hawaiian Bread I

Reviewed: Jan. 10, 2008
This is so yummy! The smell is wonderful as it bakes, too! I didn't have any coconut extract, so I used vanilla as others have done. My husband and son thanked me as they don't like coconut flavor. I imagine it can only be better with the coconut! I used the sweet bread setting on my machine with a light crust, but the crust was *very* dark, especially on the sides. My husband liked it that way, but my son and I didn't care for it. The inside of the bread was still very, very moist. I think next time I'll take the loaf out of the machine earlier, or I'll bake it in the oven. It could have also been that since we were not home, it sat on the 60 min "warm" cycle and actually kept cooking. Thanks for the wonderful recipe! I can't have King's Hawaiian bread due to the additives in it, and this is an even *better* alternative!

Absolutely Ultimate Potato Soup

Reviewed: Dec. 28, 2007
I halved the recipe and only used 4 slices of bacon. This made just enough grease to saute the veggies and add a light bacon flavor. I ate two and saved the others to add to the soup. I don't like tarragon and didn't want the taste of cilantro in my soup so I used chives and parsley. I used red skinned potatoes which I think hold their shape better and they don’t give the soup a grainy texture. The recipe turned out very well and comes together quickly. I had planned on only eating a small cup of the soup but it was so good, I ate two cups. I decided to add a little shredded cheddar to the second serving. Delicious!

Slow-Cooker Chicken Tortilla Soup

Reviewed: Dec. 21, 2007
This is a very good recipe but i only gave it 4 stars mainly because I add a few things to make it more to our liking. I only added a cup of chicken broth and added an extra can of chile's. I took advice and add can of rinsed black beans. I also tasted it and decided to add some cooked rice which was really really good. Before I served it I add a squeeze of lime juice which makes it awesome and topped it with sour cream and cheese. Made the chips also and it turned out awesome will make again!

Roll-Out Cookies

Reviewed: Dec. 19, 2007
These were the easiest cut out cookies I have made yet. They didn't need to be refrigerated (yeah) and they came together quickly. The most difficult part was getting the last of the flour mixed in, but I just dumped the mixture onto a well cleaned counter top and used my hands to mix it together (sort of like kneading bread) and it came together really well. I also used Almond Extract rather than lemon and they are very good. If you roll them out thin they are really crisp (a great texture for a sugar cookie) OR you can roll them thicker and they hold together better but were NOT tough. VERY NICE. This will be our Christmas Cookie Recipe from here forward. Thanks so much!

Apple Pie by Grandma Ople

Reviewed: Dec. 10, 2007
I made this last night and well it is gone! Pie Plate looks like it was licked clean lol! I only gave it 4 stars because it doesn't say in the recipe how long to let the topping simmer!! I just guessed and my pie was a lil runny but not a liquid mess or anything. I know next time to let it simmer longer! This was the first pie I ever made and was proud of the way it came out. Thank you, Grandma Ople. :)

Cheesy Meatloaf

Reviewed: Dec. 4, 2007
This is very good! I've made it twice now. Both times I've mixed the cheese in with the meat. The first time, I used the beef & pork mixture and it was good, receiving a great reaction from my husband and son, "Please *only* make this meatloaf from now on!". The second time I used half ground sirloin and half ground turkey, plus Italian bread crumbs. I also made a "channel" in the top of the loaves (fills two pans w/ two lbs.) and added some Italian tomatoes before I baked them. Scrumptious! Other reviewers are correct - this makes a GREAT meatloaf sandwich. Also, FWIW, I didn't taste the onion soup mix much. Others may not be using two lbs. of meat to one packet??? I added in a LOT of black pepper, too.

Beef and Mushroom Stroganoff, Aussie Style

Reviewed: Oct. 17, 2007
This was very good and a nice switch from the typical beef stroganoff. I can't have mushrooms, so I left those out. I also can't have boullion cubes either, so I used 1 cup of beef broth. Since others said the sauce was thin, that's why I cut it down by 1/2 cup. I only had beef stew meat on hand, but a long simmering process made it nice and tender. I also used half and half and a 1/4 cup of sour cream. I served over Amish garlic noodles. You really do want the full amount of curry powder. It doesn't end up tasting like curry since there's a lot of cream and broth. It has a different color (yellowish) than the usual stroganoff, so don't be surprised when you add in the cream! Great recipe - thank you!

Maple Bacon Pancake

Reviewed: Oct. 13, 2007
This was very good! I had to substitute pancake mix for the baking mix, but it didn't seem to affect the finished product. I also added some breakfast sausage. I cut back the sugar in half and next time I think I'll omit it altogether. We added a drizzle of maple syrup to the top after serving and it was great. I did as others suggested and cooked it at 375 for 20 minutes, then 5 more minutes after adding the cheese and bacon to the top. It deflated a bit when I took it out of the oven and set it down, so be careful, or just add the bacon and cheese while it's in the oven. My 9 year-old son says, "I loved it. It was great! We cut it into slices and I ate mine like pizza! I helped Mom mix stuff together."

Italian Style Sausage

Reviewed: Oct. 7, 2007
Like other reviewers, I was in search of a recipe to make Italian sausage since I cannot have many of the additives (mostly MSG) in commercially-prepared sausage. We moved and I could no longer find sausage without additives. Even if you *can* eat commercial sausage, DON'T - make this and you'll never make anything else!!! I used 1/2 ground pork and 1/2 fresh ground turkey (better texture than frozen). This cuts the fat content, and it's still so great! I did add whole fennel seeds like other reviewers. I used this in pasta sauce the first time and can't wait to try it on pizza! If you haven't tried Lee Fogle's Breakfast Sausage recipe - YOU MUST! It's also fantastic! THANK YOU!!!!
