Spinach Pecan Bake

A friend made this recipe several years ago, and the two of us ate 3/4 of it at one meal! I don't change a thing, except sometimes I don't even put the extra topping on. When cooking it just for myself I cut it down to 2 servings, and the recipe still works well. I have made it for a dinner party and it went over well, even with people who don't care for spinach. One reviewer suggested garlic; that would be a good addition.

Fruit Cobbler

Very good; however, I did make a couple of changes. To cut the sugar, I used a little less than one-half cup sugar and a little less than one-half cup Splenda. I probably ended up with about 3/4 cup of sweetener instead of the 1 cup called for. A second change was to reduce the vanilla by about half. This dish goes very well with vanilla ice cream, especially if the cobbler is warm or even hot!

Ricotta Cheese Cookies

These cookies were so good! I followed the recipe exactly (except I used a smaller yield). For the frosting, I added a small amount of cool whip and it was great! I also used some leftover strawberry glaze mixed in to make strawberry icing. Excellent!

World's Best Lasagna

This was my first attempt at making lasagna. It is the best lasagna I have ever had!! My mom, dad, and, I all agreed the lasagna was restaurant quality. It was like eating out at home!! Also, it tasted like an old family recipe. The only adjustment I made was cutting the salt in the sauce by half. I believe this is vital in making the lasagna taste perfect!! Like other reviewers commented, this is our new meat sauce!! I will make it again whenever I want a perfect lasagna.

Strawberry Pineapple Bread

What a wonderful quick bread! And it was a hit at my church. Don't change a thing in this recipe--except you might throw in some big hunks of macadamia nuts so people get an extra treat once in a while!

Seven Layer Tortilla Pie

VERY GOOD! I like the fact that this is a meatless recipe. The flavors were great. We prepared this exactly as written and the proportions came out perfectly. Didn't have anything left over when we were done assembling the pie. We will be having this again.

Taqueria Style Tacos - Carne Asada

Excellent Excellent Excellent!!! We prepared these as written except we omitted the sauce portion of the recipe and just used fresh salsa from the veggie section of our market. They were VERY GOOD! If you love traditional mexican as much as we do, then I highly recommend you try these. The sauce just seemed to be too time consuming to do, but might try it when we have some extra time on a weekend.

Fried Rice Restaurant Style

Although this recipe doesn't taste much like the fried rice that I've ever had, I make this recipe quite often. My 2 year old son LOVES it, so I make a batch and we eat it for lunch. The leftovers reheat well! The only change that I made is to use a little over a cup of frozen peas and carrots. This is a recipe that we will use often. It is great with Teriyaki Chops, which is another recipe from this site.

Oaxacan Tacos

WOW WOW WOW!!!! These are absolutely the BEST THING I HAVE MADE FROM THIS SITE! If you are into "Americanized" mexican food, then these tacos aren't for you. However, if you love traditional mexican, then you MUST TRY these! My entire family can't get them out of their head. We have had them 3 times in 8 days. The flavors are simple but come together to make an incredible authentic tasting taco. LOVE THESE! We prepared the recipe exactly as written. I highly recommend you try them.

Shredded Beef Enchiladas

The only reason that I'm giving them two stars instead of one is because the meat portion of this recipe is very tasty. I do not recommend this recipe as written, but the beef would be great in tacos. I think that I will try that next time. This recipe makes WAY TOO MUCH CHEESE SAUCE! The taste of the chiles is overwhelming!

I really don't like to leave one star reviews, but there was just no way around it with this one. While it was cooking the aroma was just AWFUL! But, I went ahead and gave it a shot. In all honesty, the taste was worse than the smell. They were SO BLAND! ....plain, plain, plain! I really can't say anything good about this recipe. I have removed it from my recipe box and will not be having it again.

Barbie's Tuna Salad

I searched for a tuna salad recipe that was a little different from the norm. I doubled this recipe and found that the taste was just ok, but easily modified to be GREAT! First of all, I would cut down on the amount of relish and parsley and add a little more cheese. I used fresh onion since I don't keep minced dried onion in the house. It took about 2 Tbl of the onion to make it "show up" in the taste of this recipe. That's 2T total for this recipe DOUBLED. I know I will make this again, but with a few little tweaks that I mentioned. Also, don't be afraid of the curry. It is excellent in this dish!

Chilie Pork Tacos

Delicious alternative to regular tacos. We had some ground pork we needed to use, so I searched this site and found this recipe. I was a little skeptical because of the vinegar, but this recipe turned out FABULOUS! The Salsa Verde *makes* the tacos, be sure to use it. This one's already in our recipe box to use again and again! Thanks for a great twist on TACO NIGHT! :)
