Basil Cream Chicken

I'm always looking for easy "meat" recipes to translate into vegetarian dishes that I can serve to my non-vegetarian family and this dish made the grade! I substituted Quorn naked cutlets and vegetable broth and this dish was completely finished by my entire family. That's pretty unheard of. I definitely agree with thickening the sauce up, just a bit, with a little cornstarch but it was superb other than that. Yum!

Buffalo Chicken Wings I

Rather than mess with digging out the bone in the wings, I cut up good sized chunks of boneless breast. I blanched the chunks in flour and deep fried them before tossing them in the sauce. I'm a life long vegetarian so I have no idea how they tasted. My husband raved about them and has insisted on having them repeatedly since then. These were incredibly simple and fast considering how much he enjoys them. Good stuff!

Creamed Spinach I

Sour Cream Macaroni Salad

Rita I made your sour cream macaroni salad today & I think its a winner. I didn't have enough green pepper & used some yellow/red/little celery. Yummy! I made it for 20 servings. The tri-color peppers dress it up. Thank you. Next time I'm going to add corn & peas. Bettina8

It's a great recipe and comes out great the first time, but the measurements on the glaze are a bit off: double the milk or you just have sugary crumbles.

Double Layer Pumpkin Cheesecake

This was a nice suprise. The pumkin layer cuts the richness of the cheesecake nicely. It's a good compromise for those who don't care for traditional pumpkin pie. (that would be me!)
