Portuguese Chicken I

Fresh Blueberry Pie I

There's not much better than a fresh blueberry pie when blueberries are in season. Yum yum yum. I used 2 square boxes of fresh blueberries, and cornstarch in place of tapioca, 1/3 cup sugar in place of 2/3, and it was fantastic. Loved it. Thank you!

Deep Fried Oreos®

So so so bad, yet so so so good. Love em. Just mix up some pancake batter with water until the consistency is enough to coat the cookie, you don't need egg or milk.

Tomato Juice Spaghetti Sauce

Well, I don't think this tastes like chef boyardee, but I didn't like it. More like a barbecue sauce than spaghetti sauce. In fact, if you made some minor ingredient changes I think you'd have a wicked sauce for ribs chicken. This would be a great Cinncinati (sp?) chili sauce too. The allspice and cloves add a different flavor.

Chocolate Sauce

Good flavor but I also found it too runny. DO NOT add chocolate to thicken this. My husband and I tried to add semisweet baking chocolate and it wasn't the smooth sauce it's supposed to be, it keep small bits of the whole chocolate. Just use less water or try corn syrup. Next time I might make the syrup first (sugar and water) and when that thickens add the cocoa.

Dana's Tropical Fruit Smoothie

I used peach yogurt 'cause that's what I had. Good flavor, nice and creamy. I did use less ice also. 4 not 5 stars 'cause I didn't like the texture from the crushed pinapple too much, next time I think I'll use orange-pineapple juice.

Laura's Lemon Roasted Potatoes

OMG, with some changes this was so excellent! It's only 2 of us so I scaled the ingredients for 2 and used one large baking potato. I scrubbed it and cubed it but left the skin on (so it gets crispy - yummy). I also subbed oregano for dill, and chicken stock and olive oil for butter and canola oil. I mixed everything in a liquid measure, and then poured over the potatoes in the pan. Then I just squeezed fresh lemon juice over all. So fast, so easy, and so so good. Highly recommend.

Blueberry Scones

Very good. When mixing this, it was obvious that this was way too sticky to roll, so I just dropped them on the cookie sheet, like others. When making these, use your common sense. If it seems way too sticky, don't add more flour and try to roll out, the dough will become tough (learned this the hard way:)). The scones are not sweet at all, you can really taste the blueberries. I served with clotted cream, and was told that these are better than those served in a bakery. Will make again, thank you.
