Garlic Prime Rib

I give this three stars because the flavor was good. However, the cooking directions were way off. The original directions are for a 10-pound prime rib. My prime rib was 8 pounds, so I felt confident it would be cooked properly with the given time. After 20 minutes at 500 and 60 minutes at 325, the meat thermometer registered only 80 degrees. I ended up turning up the oven to 375 and cooking the meat an extra 90 minutes. I was disappointed that my dinner was served so late.

Cream Cheese Cookie Cups

Wow, these were gobbled up in no time! I brought them to a Christmas party and everyone was impressed and asking for the recipe. I do have to admit it was a little time consuming forming and pressing the cookie dough into the cups. The chocolate chips really made it difficult to press down, and the dough was really sticky. Maybe next time I'll try with sugar cookie dough. They do puff up quite a bit when cooking, so don't be alarmed. You just need to press down the middles after you take them out of the oven and before they cool. A trick to taking these out of the pan...twist them out slowly instead of pulling up on them. They won't break this way. The filling was super easy to make and delicious!

Chocolate Chip Cheese Ball

Really great, sweet cheese ball! Just a note for those having trouble getting it to form into a ball. I always line a small bowl with plastic wrap and put the mixture into the bowl. Chill a couple of hours and voila! You can use the plastic wrap to finish the ball and roll into the pecan mixture! Soooo easy!
