Cheesy Sausage Pasta

Reviewed: Dec. 9, 2009
I used spaghetti instead of the shells and chicken breast instead of the sausage- only because that's what I had- and boy, was this great! The parmesan blends so nicely with the tomato flavor.

Blueberry Corn Muffins

Reviewed: Dec. 9, 2009
These are outstanding, although I only got 9 not-very-large muffins out of it. Nice and cakey with just the perfect sweetness. I used sweet cream butter which gave the muffins a wonderful rich flavor. Don't skip the nutmeg! It may be a small amount but it makes a world of difference.

Rich Chocolate Brownies

Reviewed: Dec. 9, 2009
I used 5 eggs, no baking powder for the double batch and whoo! Boy are these sweet and chocolatey. They're almost more fudge like than brownie like, especially after being refrigerated.

Hasselback Potatoes

Reviewed: Dec. 9, 2009
While I concede that the taste may not be exactly 5 stars, the presentation & ease, along with the simple ingredient list make this a 5 star recipe, to me. I'll probably add more cheese & bread crumbs next time, and probably some garlic (mmm!) but as written this is still a very tasty, very impressive recipe. It took me a couple potatoes to get the hang of the cutting right, but I attribute that mostly to the fact that I used small potatoes. Give this a try if you're looking for a side dish that will impress company. One thing to note: When you put them in the oven, they won't look impressive. But, while cooking, they split open & make the pretty spaces in between the slices that you see in the pictures. Don't be worried if you don't see those before cooking! Another thing to improve the flavor: When serving, use a utensil that allows you to scrape up some of the " butter-cheese-goo" in the bottom of the pan to serve underneath the potato. It improves the flavor without compromising the appearance :)

Dough Ornament Recipe

Reviewed: Dec. 9, 2009
Me and my kids just finished making ornaments and they came out pretty good. They did puff up a little in the middle, but overall I would call it a success. I will definitely use this recipe again.

Whole Wheat Beer Bread

Reviewed: Dec. 9, 2009
I was very pleasantly surprised! Not only was the whole wheat unnoticeable, but this bread succeeded in making a very bad beer (Mad Elf ale) taste very good in a bread. I also added the recommended butter on top before cooking, and would again, as I found it added a wonderful dimension to the bread's flavor. I did reduce the sugar to 1/4 cup simply because I was too lazy to go find my 1/3 cup measure. Thanks much!

Cream Cheese Squares

Reviewed: Dec. 9, 2009
Very simple. Had all ingredients on hand. The dough was fairly old; and low fat so it kind of fell apart but good thing it was smooshed into the bottom of the pan! Used one persons suggestions regarding adding an egg. BUT I only used half of an egg *beaten* and it had a very strange consistency. I would DEFINITELY make these again, simple, easy, smells DELISH! I did brush the top with margarine, sprinkled with the sugar/cinnamon mixture, and used less sugar in the cream cheese mix for personal preference. I'll improve this next time until it is PERFECT! Thanks for the recipe!

Rosemary Lamb Chops with Lemon Sauce

Reviewed: Dec. 9, 2009
The sauce was amazing. I did add a touch of garlic powder and a squeeze of lemon to the chops and let them sit for an hour. Did everything thing else as recipe was written. Will be adding this to my meal rotation. Oh, & DH raved about them and he is not the biggest lamb fan.

Butternut Squash Soup

Reviewed: Dec. 9, 2009
I roasted the squash and then put the soft meat into the dutch oven with the onions and sauteed. This is so good. I added some Louisiana hot sauce instead of the cayenne pepper and was able to control the heat and could add more at the table. Surprisingly filling.

Chocolate Ganache

Reviewed: Dec. 9, 2009
I don't know how you could give this anything other than 5 stars. It couldn't be more simple, and it is a classic. It takes well to alterations. I use dark chocolate chips for these, since no one sees the difference, and I don't need to chop anything. A 250g bag is a third of an ounce short of 9 oz and does a great job. To make sure I don't end up with any bits of unmelted chocolate, I strain it twice. It's definitely worth the time. Oh, and did I mention that when you whip it, it's like chocolate mousse frosting? Heaven!

Pueblo Green Chile Stew

Reviewed: Dec. 9, 2009
I modified this some by adding a can of Hatch enchilada sauce. I cut up some pork shoulder, rolled the cubes in flour and browned them. Then added the onions with some garlic. This was so good and the leftovers were just as great.

Amazing recipe! Delicious and so easy to make. I used a dish towel instead of cheesecloth and it worked fine. I also used olive oil in place of the peanut oil. I can't wait to make these again.

Restaurant Style Egg Drop Soup

Reviewed: Dec. 9, 2009
I was delightfully surprised! I had to change a few things: I left out the ginger and salt because I don't care for ginger and chicken broth is so salty already. I also took another users advice and added the cornstarch mixture before adding the egg... worked fine. I also only used one tablespoon of cornstarch because I don't like this soup too thick.

Easy OREO Truffles

Reviewed: Dec. 9, 2009
I have also been making these truffles and various other truffles using the same technique, for years. They are always the first to go. Just to add: I have the best luck dipping using a fork and then pouring the chocolate over the ball with a spoon. I also like to use white and regular chocolates and decorate with drizzles of the other, jimmies and the like. You can't go wrong with this easy recipe. Oh, wanted to add: if your chocolate gets hard just keep nuking for a few seconds to re-melt and add a couple drips of milk if necessary to thin it out.
